Steps:

  • Preheat oven to 400°. In a large nonstick skillet, cook sausage over medium heat until no longer pink; drain. When cool enough to handle, cut sausage into 20 pieces. On 10 metal or wooden skewers, alternately thread sausage, vegetables and pepperoni., Unroll pizza dough onto a lightly floured surface; cut widthwise into 1-in.-wide strips. Starting at the pointed end of a prepared skewer, pierce skewer through one end of dough strip. Spiral-wrap dough strip around skewer, allowing vegetables and meats to peek through. Wrap the remaining end of dough strip around skewer above the first ingredient. Repeat with remaining dough strips and prepared skewers., Arrange kabobs on a baking sheet coated with cooking spray. Bake 10-12 minutes or until vegetables are tender and pizza crust is golden. Immediately sprinkle with cheese. Serve with pizza sauce.

Steps:

  • Preheat oven to 550 degrees. Place pizza stone inside about 20 minutes before baking the pizzas off.
  • Shape the pizza in individual pies. Use flour to keep the dough from sticking to your work surface. Top each pie with a drizzle of olive oil, the tomato sauce, mozzarella and Romano. Give each child their own and let them top it as they like. For example you can go traditional Italian and top it with pepperoni and onion. Or make the pizza "Hawaiian" by adding the Canadian bacon and pineapple. Place the topped pizzas on the pizza stone and cook until the crust is golden brown and the cheese is all melty.

Pizza stone
Store-bought Pizza dough
Tomato sauce
Mozzarella
Romano
Pepperoni, sliced
Roasted red peppers, cut in strips
Pineapple chunks
Canadian bacon
Flour
Olive oil

KIDS CAN MAKE: PIZZA SKEWERS

Pizza meets kebabs on the grill. We like to pull the chunks of sausage, bread and tomatoes off the skewers with our hands, dip them in tomato sauce and eat-just like a New York slice, no forks allowed. For little kids: Let them dump the ingredients into the bowl, stir them up and tear the basil leaves over the skewers. For big kids: Let them measure out the ingredients, roll out the dough and thread the skewers.

Steps:

  • Soak eight 12-inch wooden skewers in water for 30 minutes. Prepare a grill for medium heat. Cut a 12-inch-square piece of aluminum foil.
  • Stir together the oil, Italian seasoning and 1 teaspoon salt in a large bowl.
  • Dust a work surface with flour. Roll the dough into a rectangle about 11 by 6 by 1/4 inches. Using a pizza wheel or a knife, cut the dough into 1-inch strips, then into 1-inch squares. Add the dough squares, tomatoes and sausage to the seasoned oil, and toss gently to coat.
  • Working quickly to keep the dough from getting warm, thread the skewers, alternating sausage pieces (skewer them through the casings), tomatoes and dough squares (skewer them through opposite sides of each square, keeping them as flat as possible so they cook through). Leave 1/2 inch of the skewer at both ends empty. Each skewer should have 4 pieces each of sausage and dough and about 3 tomatoes.
  • Grill the skewers, covered, until the tomatoes have dark grill lines and the dough squares have started to puff, 2 to 3 minutes. Put the prepared foil square on the grill, and transfer the skewers onto the foil cooked-side up, so that they are almost touching. Top with the mozzarella, and grill, covered, until the tomatoes are soft, the dough squares have doubled in size and the mozzarella has melted, 3 minutes more.
  • Divide the skewers among 4 plates. Tear the basil leaves over the tops. Serve with the marinara sauce, for dipping, and pass the Parmesan and red pepper flakes.

1 cup of your favorite marinara sauce, warmed, for dipping
Grated Parmesan, optional
Crushed red pepper flakes, optional
1/3 cup olive oil, plus more for oiling the grill grates
2 tablespoons Italian seasoning
Kosher salt
All-purpose flour, for dusting
1/2 pound pizza dough, cool to the touch
1 pint grape tomatoes (24 to 30)
12 ounces cooked sweet Italian chicken sausage links (about 4 links), sliced 1/2 inch thick
1 pound fresh mozzarella, thinly sliced
1/2 cup fresh basil leaves

KIDS CAN MAKE: PIZZA POPCORN

For little kids: Let them measure, tear up the baked tomato paste and fill the sachet and shaker. For big kids: Let them do all of the above, plus operate the spice grinder. To wrap it up: Fill a sachet with 2 heaping tablespoons of the pizza spice, then tuck it into a 6-ounce cheese shaker with 1/2 cup popcorn kernels and the Pizza Popcorn recipe below.

Steps:

  • Position an oven rack in the bottom of the oven, and preheat it to 200 degrees F. Line a baking sheet with parchment, and generously coat with cooking spray. Spread the tomato paste out into a thin layer on the parchment (an offset metal spatula works best). Bake until the paste deepens to brick red and is dull in color and not shiny in any spots, about 2 hours. (It will look and feel like fruit leather.) Let it cool. Tear the paste into small pieces, and finely grind them in batches in the spice grinder.
  • Add all the ground tomato paste back into the spice grinder, along with the Parmesan, oregano, garlic salt and pepper flakes, and grind to a fine powder. Store in an airtight container for up to 5 days. The spice blend makes enough for about 6 batches of popcorn.
  • To make 1 batch of pizza popcorn: Heat 1/2 tablespoon olive or vegetable oil in a large pot over medium heat. Add 1/2 cup kernels; when one pops, cover the pot, and cook, shaking the pot constantly, until the popping subsides to 1 pop every 20 seconds. Add some melted butter and 2 heaping tablespoons of pizza spice, toss to coat.

Cooking spray
One 6-ounce can tomato paste
2 tablespoons grated Parmesan
1 tablespoon dried oregano
1 teaspoon garlic salt
1/2 teaspoon crushed red pepper flakes
3 cups popcorn
