Here's a great recipe I clipped from a magzine years ago and have forgotten about. Can't wait to make it again when the weather is cooler!

Steps:
- Put broth and frozen kale (or spinach) into a heavy 4 quart pot over high heat.
- Slice sausage into 1/4 inch thick rounds. Add to pot. When mixture boils, reduce heat, cover and simmer.
- Meanwhile, rinse and drain beans; add to pot with macaroni.
- Simmer 8 minutes or until macaroni is tender.

PANERA'S KALE SOUP WITH KIELBASA AND BEANS
This is the best Kale soup I have ever eaten. I will post it exactly as Panera's did, but I used 8 ounces of the turkey Kielbasa instead of 6 and 48 ounces of the chicken broth. Great with some crusty bread.

- Heat olive oil in a large soup pot over medium heat.
- Add kielbasa and cook until browned well all over, about 5 minutes.
- Remove to a bowl.
- Add onion and celery to pot and cook until soft, about 5-6 minutes.
- Add garlic and cook for 1 minute.
- Return kielbasa to pt and add broth, water, and kale.
- Bring to boil over high heat and then reduce heat to medium-low.
- Cover and simmer until kale begins to wilt,about 10 minutes.
- Stir in potatoes, paprika, hot sauce, and salt.
- Simmer, covered until potatoes and kale are tender, about 20 minutes.
- Add beans and cook until just heated through, about 5 minutes.

- Roll kale leaves into tight tubes and cut crosswise into 1/4-inch strips.
- Heat oil in a large, heavy saucepan over medium heat. Cook and stir kielbasa in hot oil until browned, about 5 minutes. Stir green onion with sausage; cook until onions soften, about 3 minutes. Add kale; cook and stir until kale wilts, about 3 minutes.

- Place the potatoes into a large stockpot, over medium high heat. Add butter and water, and bring to a boil. Cook potatoes until tender, about 20 minutes. Reserve the cooking liquid and mash potatoes in the pan until smooth. Return the potato water to the pot and stir in salt and pepper. Simmer for 20 minutes.
- Stir in the fresh kale and sausage and simmer for another 30 minutes. Serve hot.

- Combine rice, water, and salt in a heavy medium saucepan. Bring to a full boil, covered, then reduce heat to low and cook, covered, until water is absorbed and rice is tender, 18 to 20 minutes. Quickly fluff with a fork, then remove from heat and keep covered.
- Bring water to a boil, covered, in a medium saucepan. Add kale and a generous pinch of salt and cook, covered, over moderately low heat, stirring occasionally, until kale is tender, 5 to 8 minutes.

POTATO, KALE, AND KIELBASA CASSEROLE FOR TWO
Based on a favorite soup. As a casserole, it is easier to transport or bring to lunch at the office. Casseroles are a comfort food for me, but most serve 8 or more. This recipe is for two, but can easily be multiplied for a crowd.

- Arrange a rack in the middle of the oven and preheat to 450 degrees F.
- In a dutch oven, combine the potatoes with enough water to cover them by 2 inches, bring the water to a boil, and boil the potatoes for 15 minutes, or until they are tender.
- Transfer the potatoes with a slotted spoon to a colander, reserving the cooking liquid, and force them through a ricer into a bowl. (or mash until smooth with no chunks).
- Add the butter, 1/4 cup of broth, the vinegar, and salt and pepper, to taste, and combine the mixture well.
- Bring the reserved cooking liquid to a boil. Coursely chop the kale leaves, add to water, and boil it for 10 minutes, or until it is crisp-tender.
- Drain the kale in the colander, refresh it under cold water, and press out the excess water.
- Stir the kale and 1/2 cup of the Swiss into the potato mixture and spread the mixture in a buttered casserole dish.
- In a large skillet brown the kielbasa over moderate heat and transfer it to a bowl with the slotted spoon.
- In the fat remaining in the skillet cook the onions over moderate heat, stirring, until they are golden. Stir them into the kielbasa.
- Scatter the kielbasa mixture on top of the potato mixture, sprinkle it with the remaining Swiss, and pour the remaining 1/4 cup broth on top.
- NOTE: The casserole may be prepared up to this point 1 day in advance and kept covered and chilled.
- Bake the casserole until heated through, about 20 minutes.

- Begin by cutting the kielbasa. If you are using a smaller amount, dice it into 1/4 to 1/2 inch pieces. If you're using the larger amount, slice into 1/8 to 1/4 inch thick rounds.
- Place a large, heavy-bottomed stockpot over medium heat. Add the kielbasa pieces and cook, stirring frequently, until the kielbasa has rendered quite a bit of fat and taken on some brown colour. Simmer the soup until the carrots and celery are tender, about 10 to 15 minutes. Return the kielbasa to the pan and add the frozen or fresh spinach to the pot. Cook just until heated through.
