Steps:
- Pre-heat oven to 400F degrees.
- In a frying pan over medium high heat fry onions and peppers until tender.
- Slice sausage about 1/2 inch thick.
- Fry sausage in pan with peppers and onions for 5-10 minutes.
- Drain off excess fat.
- Pour sausage mixture into a shallow baking dish.
- Bake for 20-30 minutes until crispy.
- Great served with au gratin potatoes or macaroni and cheese.

THREE-CHEESE KIELBASA BAKE
I always have some type of smoked sausage in my fridge, because it lets me get supper on the table in a hurry during the week. This recipe was in a Taste of Home booklet called "No Fuss Freezer Meals", and makes two very large casseroles. We always add way more garlic than the recipe calls for, and use a spicy chipotle sausage.

Steps:
- Cook macaroni according to package directions. Meanwhile, in a large skillet, brown sausage in oil over medium heat; drain. Add the onions, zucchini, carrots and garlic; cook and stir for 5 minutes or until crisp-tender.
- Stir in spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Drain macaroni.
- In each of two greased 13 x 9 x 2 baking dishes, layer a fourth of the macaroni and meat sauce. Combine egg and ricotta cheese; spoon a fourth over sauce. Sprinkle with a fourth of the cheddar and mozzarella. Repeat layers. Top with green onions.
- Cool one casserole; cover and freeze for up to 2 months. Cover and bake the remaining casserole at 350 for 15 minutes. Uncover; bake 15 minutes longer or until the cheese is melted to your liking.
- To use frozen casserole, thaw in the refrigerator for 24 hours. Remove from the refrigerator 30 minutes before baking. Cover and bake at 350 for 35 to 40 minutes or until heated through.

KIELBASA AND POTATO BAKE
i found this on all recipes.com. It was submittted by Geneva. I tweeked it a bit and everyone loves it. It's also an excellent dish to take to a potluck dinner. Some reviewers stated it was "soupy".I adjusted the milk to 1/2 cup. I just keep baking it until it get's thick. Sometimes I have to bake it 2 hours. It really does get thick. The last few times I made it I made it with 1 cup of milk. It seemed to get thicker quicker. I am going to change the amount of milk. One reviewer noted that the spices were too much. My family does not like all the garlic either. They said that there is enough in the kielbasa. I don't use it when making this recipe to please them not me. I sometimes top this bake with Frenches French Fried Onions (Cheddar Cheese or Original)

- Preheat oven to 375 degrees.
- In a large mixing bowl, mix together soup, onion, milk, garlic, salt and pepper.
- Stir, in potatoes and kielbasa.
- Spoon into a 7x11 inch casserole dish.
- (if the potatoes are extra large, I use a 9x11 in casserole dish.) Place casserole on a baking sheet and bake in the preheated oven for 90 minutes or until potatoes are tender.

- Cut Sausage into 2-3 inch pieces.
- Combine worcestershire sauce, sugar, onion, hot sauce and water in a flameproof casserole on the stovetop on high heat. Bring mixture to a boil.
- Add sausage pieces and transfer to oven.
- Bake at 350* for 1 hour.

- Preheat oven to 400 degrees. Line a rimmed baking sheet with foil; top with parchment. Poke holes all over kielbasa. Transfer to sheet, pulling sides of foil up to create a well. Add 1/2 cup water.
- Roast until skin is crackling and beginning to brown, about 20 minutes. Flip; continue to roast until dark golden brown, about 20 minutes more.
- Slice and serve, with horseradish and mustard.

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Spray a baking dish with cooking spray (Pam) until well coated.
- Place cut up potatoes, onions, and kielbasa in the baking dish.
- Place baking dish in the oven.
- Cover with foil.
- After 30 minutes remove baking dish from the oven.
- Remove foil and stir the vegetables and meat.
- Return the baking dish back to the oven, without the foil, and continue to bake for another 30 minutes.
- Remove from oven; stir and serve.
KIELBASA AND VEGETABLE BAKE
This recipe was given to me by my Grandma In-Law several years ago. It's been an all time favorite in our family for years now. I only had one red potato when I was making this recipe but I also had 1 yam. So I used it just like the red potato and it was every bit as good! So now I make it red for him and oranger for me!

Steps:
- Spray a 13x9 inch baking pan with non stick cooking spray.
- Pour carrots into bottom of pan.
- Peel and quarter potatoes and add to carrots.
- Cut cabbage into wedges about 2 inches thick.
- Lay in pan with carrots and potatoes.
- Add water, seasonings, and butter.
- Cover and bake at 375 for 45 minutes or until vegetables are almost tender.
- Lay kielbasa on top of vegetables.
- Cover and bake 15 more minutes or till sausage is heated through.
- Serve with french bread or garlic bread.
