Steps:
- Preheat oven to 400°. Divide sweet potatoes, onion and carrots between 2 greased 15x10x1-in. baking pans. Drizzle with oil; toss to coat. Roast 25 minutes, stirring occasionally., Add kielbasa, squash and zucchini to pans; sprinkle with salt and pepper. Roast until vegetables are tender, 15-20 minutes longer. Transfer to a serving bowl; toss to combine. If desired, serve with mustard.

KIELBASA STIR-FRY
My father used to make this recipe, it is very tasty and very easy. If you would like a smaller serving size just use less of everything, like only a half of a head of broccoli. The vegetables definitely add up!! This recipe is great and fun to work with.

Steps:
- Begin rice first, using instructions on package.
- Slice sausage in 3/4" pieces or smaller pieces if Desired and place in a heated wok or a large skillet.
- Add broccoli, cauliflower, carrots, onion, bell pepper, and garlic after the sauage becomes slightly browned.
- Let saute for approximately 8 minutes or until the onion becomes clear Add the soy sauce, worcestershire sauce and sugar and continue to saute until the vegetables are tender and the sausage is browned.
- Serve over rice and ENJOY!

- In a large nonstick skillet, heat 1 tablespoon of the oil over medium-high. Add sausage; cook about 3 minutes, stirring occasionally, until lightly browned. Add broccoli and bell pepper; cook 5-6 minutes, stirring occasionally, until broccoli is bright green and slightly tender. Remove mixture to a plate.
- Wipe skillet clean-careful, may be hot-reduce heat to medium, and add 1 tablespoon oil. Add eggs. Cook 2-3 minutes until set, stirring once or twice. Transfer to a cutting board and cut into 1/2-inch pieces.
- Return skillet to stove over medium-high. Add remaining 1 tablespoon oil. Add cauliflower; cook, undisturbed, until softened and lightly toasted, about 4 minutes. Remove from heat. Stir in soy sauce, sesame oil, sugar, pepper, sausage mixture, and egg. Divide among plates and top with cilantro.
