Steps:

  • 1. Let milk sour until it is very thick. Heat to 120 degrees and pour into a coarse cloth bag and let drain overnight.
  • 2. Crumble curds until they are fine, then mix soda with cheese thoroughly. Place in bowl, cover with a cloth and let set at room temperature for 3 days. Stir every morning and evening.
  • 3. At the end of the third day, place the bowl of cheese in the upper part of a double boiler. Over heat, stir in salt and water until smooth. Cheese should be thick and yellow and have a sharp smell.
  • 4. Pour into cup sized containers. Cool, then spread on bread to serve.

Steps:

  • Preheat oven to 200 degrees F (95 degrees C). Line a colander with cheese cloth and place over a large pot in the sink.
  • Gently mix buttermilk and cream together in a 2-quart ceramic casserole dish.
  • Cook in the preheated oven for 2 hours and 15 minutes.
  • Pour buttermilk mixture into the prepared colander; drain for 45 to 60 minutes. Transfer drained cheese to a bowl and beat with an electric hand mixer until smooth and creamy. Store in the refrigerator.

Steps:

  • In a small bowl, mix cottage cheese and baking soda. Let stand at room temperature for one hour. This allows the curds to break down, and melt smooth. Don't add more baking soda, it will taste funny, and don't worry if it's not perfectly smooth after an hour. In a large saucepan, melt Butter and Process Cheese. Stir occasionally until completely melted. Add the broken down Cottage Cheese and Parmesan Cheese, then stir until smooth. Add in the Caraway seeds (maybe a teaspoon or more) Stir. If mixture is very thick, add some milk. Pour into containers (for serving or storing) and cool Serve with Rye Bread, Crackers, Pretzels or a spoon!

1 LB. Small Curd Cottage Cheese
1/2 TSP. Baking Soda
4 TBL. Butter or Margarine (I prefer Butter)
8 OZ. Process Cheese (ex. Velveeta) cubed
2 TBL. Grated Parmesan Cheese (a little more is good too)
Caraway Seeds
2 TBLS. Milk (optional)

Steps:

  • CRUST: In a large mixing bowl, blend all the ingredients, cutting in the butter and working the mixture with your hands until it is well mixed and workable.
  • Divide the dough into 2 equal portions.
  • Use one half to line the bottom of a greased 9-inch springform pan, the other half to line the sides of the pan.
  • Either roll out the dough or press it in with your fingers.
  • Chill before filling.
  • CHEESECAKE: Preheat the oven to 375 degrees F.
  • Press the cottage cheese through a sieve.
  • Combine the cornstarch and the baking soda and set aside.
  • In a large mixing bowl, combine the cottage cheese with the sugar, eggs, lemon rind and vanilla.
  • Beat until very smooth.
  • Add the dry mixture to the cheese and blend well.
  • Stir in the sour cream and raisins.
  • Pour the cheese mixture into the prepared crust and bake for one hour, or until done.
  • The center will remain soft.
  • Turn off the oven and prop the door open.
  • Allow the cake to cool to room temperature.
  • Serve at room temperature as well.
