KOLATKI/KOLACKI (UKRAINIAN CHRISTMAS COOKIES VIA CZECHOSLOVAKIA)
This is an old recipe from my Mom's dad's side, the origins of which we are unsure. All we know is, they are addictive! Unlike traditional Polish and Czech pastries by the same name, these are tiny open-ended jam cookies. They are traditionally eaten at Christmastime. This is my mom's version of the recipe, so I must warn you from experience that if you double it, you will actually have more of a quadruple recipe!

Steps:
- Preheat oven to 350 degrees.
- Cream together butter, cream cheese, sugar, egg yolks and lemon zest.
- Stir in flour, creating stiff dough.
- Mold dough into hamburger-size patties and refrigerate for at least 8 hours.
- Roll patty out 1/8-1/4 inch thick, preferably on chilled marble or glass cutting board.
- Cut dough into 2 1/2 inch squares.
- Place squares on cookie sheet (ungreased is OK).
- In each square, dab about 1/3 teaspoon pastry filling.
- Fold one corner halfway over pastry so that it points to opposite corner.
- With pastry brush, dab egg white onto folded corner.
- Fold opposite corner onto folded corner.
- Press lightly to fix with egg white.
- Optional: Brush egg white over top of cookie and dust with confectioners' sugar.
- Bake cookies for 15-20 minutes or until edges are slightly brown.

UKRAINIAN TEA COOKIES (BUBLYKY)

Steps:
- Cream the butter with the sugar and lemon rind until light. Add the egg yolks, one at a time, and beat well.
- Press the hard cooked egg yolks through a sieve and add to the creamed mixture along with the lemon juice and grated lemon rind. Stir in the blanched (no skins) nuts, and then the flour; mix thoroughly.
- Break off small pieces of dough, roll into finger lengths of pencil thickness, and shape them into rings.
- Mix finely chopped almonds with the 1 cup sugar.
- Dip each ring into a slightly beaten egg white and then into the almond-sugar mixture.
- Place the rings on a greased baking sheet and bake them in a moderate oven (350 degrees F.) for 15 minutes, or until delicately browned.

Steps:
- In a medium pot, combine wheat kernels and milk.
- Bring to a boil.
- Reduce heat, cover, and simmer 3 hours.
- Add more liquid as necessary to keep kernels covered.
- Scald the poppy seeds with boiling water, drain, and add lukewarm water to cover.
- Soak 30 minutes, drain and grind in a food processor.
- Set aside.
- Drain water from wheat kernels and keep 1/2 cup of the liquid.
- Add the honey to the liquid and mix well.
- Mix kernels, honey, ground poppy seeds, almonds, apricots, raisins, and salt.
- Bake in a 2-quart casserole dish, uncovered, at 325 degrees for 20 minutes.
- Kutia may be served warm or chilled, and sprinkled with cinnamon, but it is best when prepared several days ahead of time in order for the full flavor to develop.
- Kutia can be refrigerated for up to two weeks.

CZECHOSLOVAKIAN COOKIES
Spicy bar cookies with a nice crunch of pecans plus the sweetness of a jam filling.

Steps:
- Preheat oven to 325 degrees F (165 degrees C). Grease one 8 inch square baking dish.
- Cream the butter until soft and fluffy. Add the white sugar gradually, until light and fluffy. Beat in the egg yolks.
- Sift the cardamom, allspice and flour together. Gradually add it to the butter mixture and stir to combine well. Stir in the chopped pecans.
- Spoon 1/2 of the dough into the prepared pan, spreading evenly. Top with strawberry jam and cover with the remaining dough.
- Bake at 325 degrees F (165 degrees C) for 1 hour or until lightly browned. Cool then cut into 1 1/2 inch sized squares.
