VIETNAMESE ICED COFFEE
Strong coffee with sweetened condensed milk and chilled on ice makes an unbeatable Southeast Asian treat. Even those who only take their coffee black will like this. Serve it on hot summer days or as an evening treat. We learned this in Vietnam, and now drink almost all our espresso this way.

Steps:
- Brew coffee with water using your preferred method to make brewed coffee. Spoon 2 tablespoons of sweetened condensed milk into each of 4 coffee cups. Pour 1 cup of fresh hot coffee into each cup, and stir to dissolve the milk.
- Serve guests cups of coffee, and give each one a tall glass with 4 ice cubes, and a long handled spoon. Guests pour hot coffee over the ice cubes and stir briskly with the long handled spoon, making an agreeable clatter with the ice cubes to chill the coffee.

- Mix the ground coffee, allspice, and cinnamon in a small bowl, and place into the filter of a drip coffee maker. Pour 4 cups of water into the coffee maker, and turn on the machine. When coffee has finished dripping, pour into 2 cups. Stir in cream and sugar to taste.

- Stir spices into hot brewed coffee.
- Serve with cream and sugar if desired.
WORLD CLASS KONA COFFEE CUSTARD
Steps:
- Put 7/8 of the sugar in saucepan with the water. Bring to a boil. Cook until dark in color, about 4 to 5 minutes. Pour immediately into a 4-cup souffle dish. Set aside. Preheat oven to 325 degrees F. Mix coffee, milk, cream, and vanilla into saucepan. Bring to just a boil, stirring frequently. Remove from heat. Set aside. In a bowl, whisk eggs and egg yolks with remaining sugar until creamy. Whisk in hot milk mixture. Place on top of the caramel in the souffle dish. Cover with aluminum foil. Put souffle into a pan and fill the pan with enough water to come half way up sides of the dish. Bake until set, about 40 to 45 minutes.
- To turn out, run knife around edge of dish to loosen. Cover with serving plate, hold tightly and invert.
KONA COFFEE-TINI

- Combine iced coffee and rum in a cocktail shaker filled with ice. Shake vigorously until frost forms on shaker. Pour into chilled martini glass.
CINNAMON SPICED COFFEE
This is a delicious cinnamon spiced coffee. Other ingredients added are... dark brown sugar and vanilla extract. Optional garnishings are...Cool Whip and ground cinnamon. Cooking time in making this coffee may vary. It all depends upon one's coffee maker. Mine is an older model, so it takes 15 minutes for me to brew this coffee.

- Place coffee and cinnamon in filter in brewing basket.
- Carefully stir the coffee grounds and cinnamon.
- Insert brewing basket to coffee maker.
- To the coffee pot, add the brown sugar and vanilla extract.
- To the coffee maker, add the cold water, then place in coffee maker.
- Turn on your coffee maker.
- When coffee is done brewing, stir coffee in coffee pot; to dissolve the brown sugar.
- Serve coffee in cup or mug with a dollop of Cool Whip, and a sprinkle of cinnamon (if desired).
- This makes: 6 and 3/4 cups of coffee.
- Note: The first few times I made this coffee, I used Gevalia Hazelnut, and the second time I used Folgers French Vanilla (for variety). I did make this in an 8 cup coffee maker, which does end up making 9-(3/4 cups of coffee each).
- Also, the first time I made this coffee, I only used 1/4 cup of the ground coffee, as I didn't want very strong coffee, and this still tasted great. I also only added 2 teaspoons of the vanilla extract. I found adding the extract helps to make this coffee taste a bit smoother, and even better.
- By the way, some people may think the teaspoon of the cinnamon is a bit much, but not if you add milk to your coffee. I did make this once only adding 3/4 tsp of the cinnamon, but I've found I much prefer this recipe using one measuring teaspoonful.

- To season steak: Coat both sides of 2-1/2-3-lb. boneless sirloin steak (about 1-inch thick) with 1/2 cup coffee mixture. Let stand at room temperature 30 minutes before grilling or pan-frying to desired doneness.
