- In a small mixing bowl, stir together the brown sugar, vinegar, soy sauce, ginger, crushed peppers, and black pepper. Set aside. Heat a large skillet over medium heat; add sesame oil and swirl around to coat. Add the ground beef and stir and cook just until no longer pink, then add the garlic and cook until meat is done. Drain off excess fat. Reduce heat to medium-low and add the reserved soy sauce mixture, stirring to coat the meat. Simmer and stir for a few minutes to blend the flavors and slightly thicken the sauce. Serve over hot rice and garnish top with green onions. NOTE: Instead of chopping the ground beef up as it cooked, I roughly shaped the raw beef into a log then wrapped in foil and partially froze it for a couple of hours, then sliced it off in irregular pieces before cooking.

- Heat a large skillet over medium-high heat. Add beef and cook, stirring and crumbling into small pieces until browned, 5 to 7 minutes. Drain excess grease.
- Add garlic, ginger, and sesame oil, stirring until fragrant, about 2 minutes. Stir in soy sauce, brown sugar, and red pepper. Cook until some of the sauce absorbs into the beef, about 7 minutes. Add 1/2 of the chopped green onions.
- Serve beef over hot cooked rice; garnished with sesame seeds and remaining green onions.

- For the beef: Add the beef to a medium skillet over medium-low heat. Cook, breaking up with a wooden spoon and slowly rendering the fat, 8 to 10 minutes. Using a large spoon remove half of the rendered fat and discard. Add the garlic, scallions and ginger and cook an additional 2 to 3 minutes. Set aside.
- For the sauce: Stir together the soy sauce, gochujang, honey and sesame oil in a small bowl. Stir some of the sauce into the beef, a few tablespoons at a time, until seasoned to your taste. Set aside.
- For the sticky rice: Rinse the rice until the water runs clear. Combine the rice, oil and 1 1/2 cups water in a pressure cooker or Instant Pot®. Cook on high pressure, 8 minutes. Allow the steam to release slowly, for about 5 minutes, then remove the lid. Roll the beef, sticky rice, sauce and cucumber slices in lettuce leaves and eat.

- Push the SAUTE button and wait for the pot to heat up. Add in the sesame oil.
- Add in the ground beef and garlic and cook for about 5 minutes, until it's mostly not pink anymore. We don't want to fully cook it.
- Add in the brown sugar, soy sauce, ginger, salt and pepper, and crushed red pepper flakes.Mix well. Scrape the bottom of the pot so that you don't get a BURN error.
- Pour the beef broth on top, but don't mix it in.
- Cancel the SAUTE function.
- Place the trivet in the pot, right over the beef.
- Rinse rice under cold running water until the water runs clear.
- In an oven safe pan that fits in your Instant Pot (I used a 7-inch cake pan that is 3 inches deep and fits perfectly in my 6 quart Instant Pot), add rice, water, butter, and salt. Mix together.
- Place lid on pot and press MANUAL (or PRESSURE COOK) and set timer for 7 minutes.
- Allow 10-15 minutes to come to pressure before it starts the countdown cook timer.
- Once it is finished cooking, do a natural release of the pressure for 8 minutes. Remove the lid.
- Wearing oven mitts, remove the pan of rice. Fluff rice with a fork.
- Mix the Korean beef. Serve over rice topped with diced green onions and sesame seeds.
