KOREAN SESAME CHICKEN AND POTATOES
This Korean chicken main dish with potatoes, onions, and carrots is served over a bed of rice. Seasoned with soy sauce, sesame seeds, and, of course, garlic.

Steps:
- Place a large Dutch oven over medium heat. Add chicken and cook until browned, about 10 minutes. Drain and discard fat.
- Mix soy sauce, water, garlic, sesame oil, and sesame seeds together in a large bowl. Add sugar to taste, remembering you can always add more, but you can't take away. Stir to mix well and dissolve sugar. Fold in potatoes, carrots, and onion. Season with pepper.
- Pour vegetables into the Dutch oven to cover chicken. Cover with a lid and bring to a boil, about 5 minutes. Stir and reduce heat to medium for about 5 minutes. Reduce heat to low and simmer 40 minutes more, stirring occasionally.
- Serve chicken and vegetables over hot cooked rice.

AUNT ANNE'S SESAME COOKIES
After trying my hand at countless sesame cookie recipes, my Italian girlfriend shared her Aunt Anne's recipe and I knew my search had ended! Basically an anise flavored butter cookie covered in sesame seeds. The smell when removing them from the oven is wonderful!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, cream together the butter and sugar until smooth. Beat in the egg and anise extract until well blended. Sift together the flour, baking powder and salt; stir into the butter mixture until well incorporated. If you are using a stand mixer, let the dough mix for another minute to add lightness to the dough. The dough will be soft, but will hand roll easily.
- Pinch off pieces of dough slightly smaller than a walnut, and roll them into small logs. Dip in milk, then roll in sesame seeds. Place cookies one inch apart on a cookie sheet. Cookies will not spread very much.
- Bake for 17 to 20 minutes in the preheated oven, or until bottom and sides of cookies are lightly toasted. Remove from cookie sheets to cool on wire racks. Store in an airtight container at room temperature.

SESAME SEED COOKIES I
Italian cookies rolled in sesame seeds

Steps:
- Combine flour and sugar in a bowl. Cut in shortening with a pastry blender-or work with your hands - until mixture resembles coarse meal.
- Add anise oil (optional) small amount for it is very strong, to 1/2 cup of the milk and add to flour mixture. Gradually add more of the milk mixing until dough holds together.
- Pull off small portions of dough and roll between palms of the hands into a roll about finger size. Roll in sesame seeds. Seeds stick better if put in sugared water and taken out and put on a clean lintless cloth. Roll on cloth with seeds, then flatten out too about 1/4-inch thickness. Cut into 2 inch strips, place on ungreased baking sheet.
- Bake at 350 degrees F (180 degrees C) for 20 to 25 minutes, or until golden brown. Remove, cool completely, then store in an airtight container.

KOREAN SESAME SEED COOKIES
I got several recipes from a Korean friend at the university. This is one of the few sweets recipes - a no bake gluten free candylike cookie which looks quite pretty. For the syrup I've so far used molasses, agave and rice syrup successfully. Cooking time doesn't include cooling time.

Steps:
- Roast white and black sesame seeds seperately in dry pans until they start to pop.
- Remove from pan onto plates.
- Slowly heat sugar and syrup in a pan, stirring constantly, until sugar dissolves.
- Divide the sugar and syrup mixture, mix one half with the white and the other with the black sesame seeds.
- Spread both mixes onto seperate parchment or non stick baking paper sheets, cover with another sheet and flatten, then remove top sheets and lay the black sesame layer on top of the white one and remove the sheet from the black layer.
- With the help of the underlying sheet roll the black and white layers tightly into a roll, so that the white layer encloses the black one.
- Let the roll cool, then slice into about 1/4 to 1/3 inch slices.
MIKA'S KOREAN SESAME SEED COOKIES (GGAE GWA JA)

- Cream butter with brown and white sugars. Add eggs and beat well. Add baking soda, hot water and vanilla extract. Mix well.
- Stir in flour and sesame seeds to make a stiff dough. Cover and chill until dough is firm.
- Roll heaping teaspoonfuls into balls; place on greased baking sheet, about 2" apart. Flatten slightly. Bake at 325 degrees for 10-12 minutes.

- With an electric mixer, beat together the eggs, sugar, butter and Vanilla.
- Separately, mix the flood and baking powder together form flour into a well. Put the egg mixture in the middle of the well and fold by hand until firm cookie dough.
- Roll out in a long (about 1/2 inch wide) strips and cut into thumb length pieces.
- Dip a piece into milk then into sesame seeds.
- Put on greased tray.
- Bake at 400 degrees about 10-15 minutes.

SESAME SEED COOKIES II
Steps:
- Cream butter, sugar and brown sugar. Add eggs and vanilla, blend well.
- Stir together flour, baking powder and salt. Add gradually to the creamed mixture, blending well.
- Turn out the dough onto a floured surface and knead 1-2 minutes until the dough is smooth. Break off a small piece of dough and roll it in your palms to make an oval about 2 inches long and 3/4 inch thick.
- Dip the oval in milk and roll it in sesame seeds. Place on the greased cookie sheet. Repeat with the remaining dough.
- Bake at 350 degrees F (175 degrees C) for 15 minutes or until golden. Remove to wire racks to cool.

SESAME SEED COOKIES
A friend of mine gave me this recipe a while ago. It was a hit and should be included in everyones' cookie tray. NOTE: Sesame seeds should be fresh not already toasted.

- Preheat oven to 375. Butter two baking sheets. In a large bowl, stir together the flour, sugar, baking powder and salt. With an electric mixer on low, add butter until blended. Whisk together the eggs, zest and vanilla and add this to the flour mixture and continue beating on low until a smooth dough is formed.
- Pinch off a small pice of dough about the size of a small golf ball and roll it into a log about 2 inches long. Roll the log into the fresh sesame seeds, pressing them lightly to stick. Place the cookie on prepared baking sheets and continue forming the remaining cookies the same way, keeping 2 inches of space between each cookie. Bake for 25 minutes or until lightly browned. Cool and you can store in an airtight container.
