ASIAN-STYLE SALMON PACKETS

Steps:

  • Preheat oven to 400°. Place each onion slice on a double thickness of heavy-duty foil (about 12 in. square). Top with salmon. Combine next seven ingredients; spoon over fillets. Fold foil around mixture; crimp edges to seal., Place on a baking sheet. Bake until fish flakes easily with a fork, 15-20 minutes. Be careful of escaping steam when opening packets. Serve with mint and lime zest.

SALMON EN PAPILLOTE (SALMON IN PARCHMENT)

Salmon cooked en papillote, which means wrapped in a packet of parchment (or foil), is a dramatic way to procure perfectly cooked salmon, but it isn't difficult. Fold a fillet into a cut piece of parchment, and then layer it with seasonings or perhaps vegetables or citrus fruit. Then simply bake the packets until done. The steam created by the parchment produces reliably moist salmon, and opening the individual packets at the table makes for a fun way to start dinner.

Salmon en Papillote (Salmon in Parchment) image

Steps:

  • Heat the oven to 400 degrees. Cut 4 large heart-shaped pieces of parchment paper or foil, and place them on a sheet pan. Fold the parchment or foil in half down the middle, place a fillet with its garnishes and seasonings on one side of each, fold the other side over and crimp the rounded edge tightly closed.
  • Place in oven for 10 to 15 minutes, depending on how done you'd like to serve the salmon. The packages should puff up and make for dramatic serving.

4 (6- to 8-ounce) skin-on salmon fillets
Cut vegetables, fresh herbs and/or slices of lemon, lime or orange
Salt and pepper

Steps:

  • Preheat oven to 425 degrees. Lay 1 phyllo sheet on a clean work surface. Brush with melted butter; sprinkle with 1 tablespoon parsley. Top with another phyllo sheet.
  • Season salmon fillets with salt and pepper. Place one fillet 3 inches from short end of dough; spread 1 teaspoon creamed horseradish on top.
  • Make salmon packet: Carefully fold the end of the dough over one fillet; gently fold in both of the long sides of the dough. Roll salmon over folded sides to form packet. Repeat process, making four packets. Brush tops and sides of packets with egg.
  • Place packets on a baking sheet; bake until golden brown, about 10 minutes. Serve hot.

8 phyllo sheets, thawed
2 to 3 tablespoons butter, melted
1/4 cup chopped fresh parsley
4 boneless, skinless salmon fillets, (6 ounces each)
Coarse salt and ground pepper
1 1/3 tablespoons creamed horseradish

SALMON STEAK KYOTO

Although I haven't tried this recipe yet, it sounds pretty scrumptuous. My mom got this one out of a grilling cookbook that came with her Weber grill. She made it a few nights ago and has just raved about it since. She did have one suggestion (maybe 1/4 cup instead)...cut down on the soy sauce a bit. I guess its a little on the salty side.

  • Combine all marinade ingredients.
  • Marinate salmon steaks in refridgerator 30-60 minutes.
  • Remove salmon from marinade (reserve liquid for basting).
  • Grill over medium heat for 10-20 minutes (flip the salmon steaks once halfway through and baste with remaining marinade).

Steps:

  • n a shallow glass baking dish, combine soy sauce, orange juice concentrate, oil, tomato sauce, lemon juice, mustard, green onion, garlic, and ginger. Place salmon in marinade, and turn to coat. Cover, and refrigerate for 30 minutes to 1 hour.
  • Preheat an outdoor grill for high heat.
  • Remove salmon from marinade. Pour marinade into a small saucepan. Bring to a boil, and cook for 1 minute.
  • Lightly oil the grill grate. Brush or spray salmon with olive oil. Cook on grill for 5 to 10 minutes, or until fish flakes easily with a fork. Turn salmon once, and brush with boiled marinade halfway through cooking time.
