LEBANESE EASTER COOKIES

These cookies are made in my mom's home village of Baalbek, in Lebanon's Bekaa Valley, a week before Easter. They are such a hit, everyone asks for the recipe. They taste good and they're not hard to prepare, especially if you add the right ingredients.

Steps:

  • In a small saucepan, melt butter over low heat. Stir in sugar and water; continue stirring to dissolve sugar. Do not boil. Remove from heat and let cool slightly.
  • Measure flours into a large bowl. Add melted butter, yeast, spices, and sesame seeds; stir slowly for about 10 minutes to thoroughly blend ingredients. Cover the bowl with plastic wrap and leave dough in bowl to rest for 1 hour.
  • Prepare 3 baking sheets with cooking spray or parchment paper. In a small bowl, pour the rose water and orange flower water. Pour the warm water in to a second small bowl. Working on a floured board, pull off about 1 cup of dough. Dip your fingers first in the warm water and knead the dough a few minutes; then dip the dough in the flower water and knead it again until the dough is soft and pliable.
  • Use the palm of your hand to roll the ball of dough into a rope 12 inches long and 1 inch in diameter. Cut the rope in half and make a wreath-shaped cookie with each one, pinching the ends together. Place on a baking sheet. When you have filled a baking sheet, cover the cookies with a clean towel and refrigerate overnight to rest the dough.
  • Preheat oven to 350 degrees F (175 degrees C). Remove baking sheets from the refrigerator to warm up while the oven preheats. Bake cookies in the preheated oven until golden brown, about 15 minutes.

9 cups semolina flour
8 cups all-purpose flour
1 ½ tablespoons quick rise yeast
1 teaspoon ground cinnamon
½ teaspoon freshly grated nutmeg
½ teaspoon ground cloves
½ teaspoon ground cardamom
½ teaspoon allspice
1 teaspoon ground mahleb
¼ cup black sesame seeds
¼ cup rose water
¼ cup orange flower water
1 cup warm water

Steps:

  • Preheat oven to 350.
  • In mixing bowl, beat cooking oil and butter until blended; beat in sugar.
  • Add orange juice, baking powder and baking soda, mix well.
  • Gradually add flour to make a soft dough.
  • With clean hands, shape dough into 2-inch ovals. Place on an ungreased baking sheet. Bake at 350 degrees for 20 to 25 minutes or until golden.
  • Cool about 2 minutes and remove to a wire rack.
  • Meanwhile, in a saucepan, combine the 3/4 cup sugar, honey and 1/2 cup water, bring to a boil. Gently boil, uncovered, for 5 minutes. Remove from heat.
  • Dip the COOLED cookies into the warm syrup.
  • Sprinkle immediately with the finely chopped walnuts.
  • Return to wire rack to set.

LEBANESE STREET SANDWICHES

Arayes are grilled Lebanese-style sandwiches that are stuffed with a seasoned meat mixture. They're commonly found throughout the food stalls that line the streets of Beirut. Steps:

  • Place onions in a food processor; pulse until finely chopped. Remove and pat dry; transfer to a large bowl. Add parsley to processor; pulse until minced. Stir into onions. Add beef, egg and salt; mix lightly but thoroughly., Slice pitas horizontally in half. Spread bottoms with meat mixture to edge. Replace pita tops; press lightly to adhere. Brush outsides of sandwiches with oil. Grill sandwiches, uncovered, over medium heat until a thermometer inserted into meat mixture reads 160°, 10-12 minutes, turning every 2 minutes. Cool slightly before cutting into quarters., Combine sauce ingredients; serve with sandwiches.

Steps:

  • Line cookie sheets with parchment paper, and heat oven to 375°F.
  • Cream butter and sugar in a large bowl.
  • Add orange water and sifted flour, and stir until the mixture forms a thick dough.
  • Set aside.
  • To prepare the filling, combine the nuts, sugar and cinnamon in a small bowl.
  • Form 1 inch balls with the dough, and press the center to form a dent for the filling.
  • Fill each cookie with about a teaspoon of the filling, and place the cookies on the parchment.
  • Bake 15-20 minutes or until golden.
  • Cool on wire racks.

  • Using a stand mixer with the whisk attachment or sturdy hand-held mixer, whip the butter on high speed until fluffy, creamy and pale, about six minutes. Stop and scrape the sides of the bowl with a spatula for even whipping. Add the sugar and orange blossom water and whip until well combined and fluffy. On low speed, slowly blend in the flour, ½ cup at a time.
  • Handle the dough as gingerly and swiftly as possible to shape the cookies. Take a large handful of the dough and shape it into a log about 1-inch tall and wide (this is pretty narrow!) on a lightly floured work surface. If the dough is crumbly, gently push it together. Use a sharp knife to cut ½-inch pieces diagonally (these are quite small; they expand when baked).
