GREEN BEANS LEBANESE

This is my dad's recipe for green beans. I don't know how authentically Lebanese it is, but he said it was, and this is the way he always fixed them

Green Beans Lebanese image

Steps:

  • Brown lamb and bones in hot oil in skillet.
  • Add onions and saute until lightly browned.
  • Add tomatoes, salt, pepper and allspice, mix well, and simmer for 10 minutes.
  • Transfer to a large saucepan, cover, and cook slowly for 15 minutes, stirring occasionally.
  • Add beans and hot water just to cover, and cook, covered, for about 30 minutes.
  • Taste broth, and add more salt and pepper if needed.
  • Continue cooking until beans are done.
  • Uncover, and let liquid cook down if you prefer a less juicy dish.
  • Tastes best if prepared a day ahead and reheated for serving.
  • Pick out and discard bones before serving.

2 -4 shoulder lamb chops, boned,excess fat discarded,and cut in small pieces,bones reserved
2 -3 tablespoons extra virgin olive oil
2 lbs green beans, washed,strings removed,broken in two
2 large tomatoes, peeled if desired,and chopped
1 large onion, chopped
2 cloves garlic, chopped
1/4 teaspoon fresh ground black pepper, more to taste,you will brobably want more
1 tablespoon salt
1/2 teaspoon ground allspice
4 -6 cups hot water

My husband and I used to visit a Lebanese restaurant in DC and loved their dish called 'Loubieh Bel Zeit.' When we moved away we craved this dish, so I tried to re-create it and came up with the following recipe. My husband LOVES it and wants me to make it all of the time now.

Green Beans in Seasoned Tomato Sauce image

Steps:

  • Heat olive oil in a skillet over high heat; cook and stir onion, garlic, and salt in the hot oil until onion is softened and browned, about 15 minutes.
  • Mix tomatoes and green beans into onion mixture. Add sugar and cinnamon to mixture; bring to a boil, lower heat to medium-low, cover, and simmer until green beans are tender, 20 to 25 minutes.

  • Heat 3 Tablespoons olive oil in a large saute pan over medium high heat. Add the onion and sauté for 3-4 minutes. Add garlic and continue to sauté for 2 minutes {if you are using meat, it can be added here and sautéed for an addition 4 minutes}.
  • Add the green beans, cumin, cinnamon and diced tomatoes and mix together. Bring to a boil, then cover and turn the heat down to low. Simmer for 40-45 minutes, or until green beans {and meat if using it} are tender, stirring occasionally. Adjust seasonings to taste as well as salt and pepper.

  • In a large, deep skillet, heat the vegetable oil. Add the sliced onion and cook over moderate heat until translucent and softened, about 8 minutes. Add the minced garlic, paprika and cayenne pepper and cook, stirring, until fragrant, about 2 minutes. Add the green beans and 6 whole garlic cloves and cook for about 2 minutes, tossing to coat the beans.
  • Pour the diced tomatoes and their juices into the skillet and bring to a boil. Reduce the heat to low, cover the skillet and simmer, stirring occasionally, until the green beans are very tender, about 40 minutes. Season the braised green beans with salt and pepper. Transfer them to a platter and serve warm or at room temperature.
