Good way to use up left-over mashed potatoes and green beans from Thanksgiving or any holiday! Turn them into another different meal!

Steps:
- 1. Spray casserole dish
- 2. Mix green beans with tomato soup. Place in bottom of casserole dish
- 3. layer browned ground chuck or hamburger on top
- 4. If using, place sliced table onions next on top
- 5. sprinkle shredded cheddar cheese on top
- 6. Bake uncovered at 350 degrees until bubbly hot. Aprox 50-60 minutes.
- 7. Opps! Mashed potatoes is then layered over the browned beef, then cheese on top of mashed potatoes.
CHEESY LEFTOVER HAM AND MASHED POTATO CASSEROLE
This is something I did one night when I had a bunch of leftovers that turned into one of my favorite comfort foods. You could switch out just about anything for anything of a similar type, chicken for the ham, different soups, etc. Make it as is or use your imagination.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Mix 1/2 of the Cheddar cheese and 1/2 of the onions into the mashed potatoes. Spread potato mixture over the bottom and up the sides of a 2-quart casserole dish to form a shell.
- Combine ham, frozen peas and carrots, mushroom soup, mustard, garlic, and pepper in a bowl; mix well. Spoon mixture into the mashed potato shell. Cover loosely with aluminum foil.
- Bake in preheated oven for 45 minutes. Remove from oven and sprinkle remaining Cheddar cheese and onions over the top. Bake uncovered until cheese is melted, about 5 minutes. Remove and let rest for 5 to 10 minutes before serving.

LEFTOVER FRIED CHICKEN, GREEN BEANS AND MASHED POTATOES MAKEOVER
My Husband brought home a special from work which was Fried Chicken, mashed potatoes and green beans that had bacon as an ingredient. We ate half of it and the next night I wanted to use the rest of it but didn't want to heat in an oven so I created a casserole and some potato pancakes. It was the best and we ate leftovers of that the next night....awesome flavor and tasty

- Take your fried chicken and strip it of all the meat and some of the skin and place it in a bowl.
- In a sauce pan warm up the chicken stock and sour cream add in your seasonings, then add flour and some of the cheese to thicken
- Now take the green beans and spread on the bottom of the small casserole dish, then place the shredded chicken on top of that and when the sour cream mixture is thickened pour over the top, shred the cheese on top of that and sprinkle the Panko on top and drizzle the butter on top of that.
- place in a 350 deg oven and start on the potatoe pancakes
- Place your Potatoes in a bowl and add an egg and mix in, then add the flour...in a small pan saute your onion until caramelized and add to the potatoes, stir and when casserole is about ready to take out of the oven start the potato pancakes
- For the potato pancakes you need butter in the pan, I don't care how much but it should be enough to almost deep fry in...by tablespoonfuls drop into the fry pan, 4 should fit in the pan...brown nicely and place on paper towels

My mom used to call this "the Mixture" and it was always a favorite around our house growing up.

- Peel the potatoes and cut into chunks. Start them boiling.
- Meanwhile, start green beans boiling.
- Meanwhile, brown ground beef.
- Slice onions and spray casserole dish with non-stick coating.
- Place the browned ground beef in the bottom of the casserole dish. Cover with half of the cheese (tearing cheese slices into chunks if using) and half of the sliced onions.
- Add green beans next, and repeat cheese & onion layers.
- Drain potatoes, add milk and butter in your preferred amounts and mash. I use about 2 tablespoons butter & add milk until the consitancy is right.
- Spread mashed potatoes over top of casserole.
- Sprinkle with additional cheese and breadcrumbs followed by paprika if desired, otherwise just with paprika.
- Bake for about 20-30 minutes in a 400 oven until top of mashed potatoes is golden and cheese is well melted. May be prepared in advance, refridgerated and baked later.
- Hints: if this is too bland, some suggestions to spice it up: try adding garlic, worcestershire sauce and other spices when browning beef. Add paprika and garlic powder to the potatoes while mixing. Use jalapeno cheese.
