LEFTOVER VEGGIE CHICKEN STIR-FRY

This is a great recipe for using up leftover vegetables that are in your refrigerator. Can use fresh and leftover veggies. This recipe will be different each time you make it depending on the choice of vegetables you have.

Leftover Veggie Chicken Stir-Fry image

Steps:

  • Sauté chicken and garlic. Set aside.
  • Coat a wok or frying pan with oil and heat.
  • Add 1/4 Cup chicken broth and the 4 cups of veggies.
  • Stir-fry 2-3 minutes stirring constantly.
  • Add the chicken and the sauce ingredients and cook 3-5 minutes stirring until the liquid thickens.
  • Serve over brown rice or pasta.

1/3 cup canned chicken stock, defatted
1 tablespoon soy sauce
1 tablespoon teriyaki sauce
1 teaspoon cornstarch
2 teaspoons fresh grated gingerroot
3 boneless skinless chicken breasts, cut into 1 inch cubes
3 garlic cloves
1/4 cup chicken broth (To coat wok or pan)

  • In a small bowl, combine the cornstarch, broth, soy sauce, garlic powder, ginger and pepper flakes; set aside., In a large skillet or wok, stir-fry vegetable blend in oil for 5-7 minutes or until vegetables are tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add chicken; heat through. Serve with rice; sprinkle with almonds.,

LEFTOVER STIR FRY (GREEN PAPAYA)

Tonight, a friend was coming over and I asked if they were good with pot luck. So I looked at what I needed to use and found the green papaya. I decided to shred some and create a stir fry with a few other things I needed to use up....the bread was the end of a hearty loaf, the turkey was a bit dry and needed to be used. The rest is just what I made up. It would be great with other veggies added. This particular combination was quite interesting, it was quite close to mu shu, which I love. I didn't have any leftover pancake batter or I would have served it that way. It was really particularly good.

Steps:

  • Heat a wok. If you don't have one, use a large fry pan.
  • Add the oil, onion, ginger and garlic and stir.
  • Add the green papaya (or what you have substituted). Stir.
  • Add the bread, mushrooms and protein. Stir.
  • Top with the parsley and sauce. Stir.
  • Serve and enjoy.
