LEMON-BUTTER POUND CAKE BARS
Whip up a pan of delicious lemon bars in a saucepan. No mixer is needed.

Steps:
- Heat oven to 375°F. Grease bottom only of 13x9-inch pan with shortening or cooking spray. In 3-quart saucepan, melt butter over medium heat. Remove from heat. Stir in remaining bar ingredients in order listed, mixing well after each addition. Spread batter in pan.
- Bake 35 to 45 minutes or until top is golden brown. Cool in pan on cooling rack 10 minutes.
- While bars are cooling, in small bowl, mix glaze ingredients until smooth. Drizzle over warm bars. Cool completely, about 1 hour. For bars, cut into 8 rows by 6 rows.

- Cream butter and sugar very well. While continuing to mix, add one egg at a time, vanilla, vinegar and the juice of one lemon. Sift together flour, baking soda, and baking powder. Fold dry ingredients into wet. After well blended and Lemon zest.
- Pour mixture into a greased and floured loaf pan. bake in a preheated 350 degree oven for about 45 minute.

LEMON BUTTERMILK POUNDCAKE

- Set a rack in the lower third of the oven and preheat to 325 degrees. Butter a 12-cup Bundt pan and flour the buttered surface, shaking out the excess.
- Combine butter, sugar, flour and baking powder in mixer with paddle. Beat on low speed 2 minutes.
- Combine remaining ingredients and add to mixer in three additions, beating 1 minute between each addition.
- Scrape batter into prepared pan and bake for about one hour, until cake is well risen and well colored and a knife inserted between the edge and tube emerges clean. Place cake on a rack in pan.
- For glaze, combine water and sugar and bring to a boil in a saucepan. Remove from heat and add lemon juice and vanilla. Unmold cake and brush glaze evenly all over outside of cake. Cool and

- For the base mix the butter into the flour and sugar.
- Mix with hands until it clings together.
- Press into a 13 x 9 x 2-inch pan.
- Bake at 350°F for 20-25 minutes or until lightly browned.
- For the filling, beat together eggs, sugar and lemon juice.
- Sift together flour and baking powder.
- Stir into egg mixture.
- Pour over baked, cooled crust.

- Preheat oven to 350 degrees F (175 degrees C).
- Pour cake mix into a large bowl. Add the egg and oil; mix until well blended. Mixture will be slightly dry. Reserve one cup for the topping, and pat the rest into an ungreased 9x13 inch pan.
- Bake for 15 minutes in the preheated oven. Set aside to cool. Meanwhile, in a medium bowl, beat the cream cheese with the sugar and lemon juice until smooth. Spread the mixture evenly over the baked crust. Crumble the reserved cake mix mixture over the top.
