EASY LEMON CHICKEN

This recipe is a family favorite. I have two very picky eaters in my house, and they simply cannot get enough of this dish!

Easy Lemon Chicken image

Steps:

  • Dredge chicken in flour.
  • In medium skillet, melt butter and oil until it sizzles.
  • Saute chicken until cooked through.
  • Remove chicken and set aside.
  • Add lemon juice to chicken stock and whisk into skillet.
  • Whisk in flour and cook until mixture boils.
  • Reduce heat to a simmer and return chicken to skillet to heat through.
  • Cook until sauce is desired consistency.
  • Add salt and pepper to taste.
  • Serve.

  • To Marinate: Combine chicken and lemon juice in a large resealable plastic bag. Squeeze out air and seal bag. Refrigerate to marinate overnight, turning once.
  • Remove chicken from marinade, reserving 2 tablespoons marinade and disposing of the remainder. Mix together flour, salt, paprika and pepper in a large resealable plastic bag. Add chicken breasts one at a time, seal bag and shake to coat evenly.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat oil in a large skillet over medium high heat. Fry coated chicken until well browned, about 10 to 15 minutes. Arrange browned chicken in a 9x13 inch baking dish and sprinkle with brown sugar. Mix broth with reserved marinade and pour mixture over chicken. Top each breast with a lemon slice and sprinkle all with parsley.
  • Bake in the preheated oven for about 20 to 30 minutes, or until cooked through (juices run clear) and tender.

I am a new cook and I created this recipe for my boyfriend who loved his mother's lemon butter chicken to death but it was a bit heavy on the butter for me. My compromise utilizes half a stick of butter and has great flavor. Serve this over rice for an amazing dinner! Great leftovers too!

Steps:

  • Heat olive oil in a deep skillet over medium heat. Add onion, shallots, and garlic; cook and stir until onion becomes translucent, about 5 minutes. Add 1/2 of the butter.
  • While onion mixture is cooking, season chicken thoroughly with salt and pepper. Add chicken to the skillet and toss to coat. Add the zest and juice of 1 lemon. Stir until chicken becomes opaque. Season with pepper again and add remaining lemon zest and juice.
  • Pour in chicken broth and remaining butter; stir, cover, and let simmer until chicken is no longer pink in the center and juices run clear, 10 to 15 minutes.
  • Mix cornstarch with 1/4 cup water and stir into the skillet. Cook over medium-low heat until sauce thickens, about 5 minutes.

  • Combine all marinade ingredients with the chicken breast and leave for 20 minutes.
  • Coat the chicken breast first in flour, then eggs, and finally panko breadcrumbs.
  • In a medium-sized saucepan heat the oil to 325˚F (170°C),
  • Deep fry the breaded chicken for about 3-4 minutes until the coating is golden brown.
  • In a small frying pan, combine the chicken stock, lemon juice, and sugar. Bring the mixture to a boil.
  • Mix the corn flour with the water, then add the mixture to the frying pan to thicken the sauce.
  • Add the chicken to the frying pan and coat with the lemon sauce.
  • Serve on top of rice. (We garnished ours with green onions and sesame seeds.)

Steps:

  • Melt butter with olive oil in heavy medium skillet over high heat. Season chicken with salt and pepper. Add chicken to skillet and sauté until brown, about 2 minutes per side. Using tongs, transfer chicken to plate. Add mushrooms and garlic to skillet. Sauté until mushrooms are tender, about 4 minutes. Return chicken to skillet. Overlap 4 lemon slices on each piece of chicken. Pour white wine and lemon juice around chicken. Reduce heat to low. Cover skillet and simmer until chicken is cooked through, about 5 minutes. Season with salt and pepper.
  • Transfer chicken to plates. Spoon sauce around chicken. Garnish with parsley and serve.
