EASY LEMON COOKIE TRUFFLES

Lemon extract adds bright citrus flavor to this easy 4-ingredient sweet treat that starts with store-bought sugar cookies.

Easy Lemon Cookie Truffles image

Steps:

  • Mix crumbled cookies, marshmallow creme and lemon extract in large bowl until well blended. Shape mixture into 1-inch balls. Set aside.
  • Melt chocolate directed on package. Using a fork, dip 1 cookie truffle at a time into the chocolate. Tap back of fork 2 or 3 times against edge of dish to allow excess chocolate to drip off. Place on wax paper-lined tray.
  • Refrigerate 30 minutes or until chocolate is set. Store in covered container at room temperature up to 5 days.

LEMON COOKIE TRUFFLES

A springtime twist on the overnight classic of Oreo Cookie balls. So simple and so easy, even the kdis can make these. I love that they travel well and are a breeze to make. I have so much fun playing around with one basic recipe and making a few variations, depending on the season and flavors I'm craving, this one is a huge hit, especially with lemon lovers.

Lemon Cookie Truffles image

Steps:

  • Crush lemon sandwich cookies until cookies are fine crumbs. Mix with cream cheese and lemon extract, adding cream cheese 1/4 pkg. at a time until mixture is a firm dough. Chill 2 hours.
  • Once chilled, make 1 T. sized dough balls.
  • Heat almond bark in microwave in 30 second intervals, stirring between each until mixture is fully melted.
  • Roll dough balls in almond bark. Top with candy sprinkles or sliced almonds. Chill immediately. Serve chilled.

These Lemon Cookie Truffles are one of my favorite go-to treats- only three simple ingredients, no baking required, and everyone who tries them needs the recipe.

No Bake Lemon Cookie Truffles Recipe image

Steps:

  • Place cookies in a processor or high-powered blender and crush until they are fine crumbs (if you don't have a food processor, you can put cookies in a resealable plastic bag and smash with a rolling pin until they are crumbs).
  • Place crumbs in a medium bowl. Add cream cheese and mix until well-blended. Roll cookie mixture into 1 inch balls (makes about 48 balls). Place balls on a cookie sheet lined with aluminum foil or wax paper and stick in the fridge for about 45 minutes.
  • Melt almond bark according to directions on package. Dip each cookie ball in almond bark and place back on lined cookie sheet. Top with yellow sprinkles (if desired - just be sure to put sprinkles on as soon as you dip them because they ). Repeat with remaining cookie balls and place back in the fridge for about 30 minutes.
  • Store leftover truffles in a covered container in the fridge.
