Lentil soup is perfect for the slow cooker. Just throw all the ingredients into the slow cooker in the morning and come home to a delicious soup.

- Combine water, ham, tomatoes, lentils, onion, carrots, celery, garlic, pepper, salt, thyme, and bay leaf in a slow cooker.
- Cover and cook on LOW until lentils and vegetables are as soft as you like, 6 to 8 hours. Remove bay leaf before serving.

Steps:
- Combine sausages, carrots, celery, onion, tomatoes, lentils, water, wine, oil, garlic, oregano, basil, thyme, bay leaf, salt, and pepper in the bottom of a slow cooker.
- Cover and cook on Low until lentils are tender and sausage is no longer pink, 6 to 8 hours.
- When ready to serve, stir in spinach and cook until it wilts, 7 to 10 minutes. Remove bay leaf.

CROCK POT LENTIL AND APRICOT SOUP
This recipe is the crock pot adaptation of Mrs Falafel's Lentil and Apricot Soup from the alt.food.vegan newsgroup. It must be one of the most popular recipes ever to come up in that group and it is also superb and even easier in the crock pot. I throw it all together before work and eat it about 8 hours later. The apricots mush down and all it needs is a quick stir before serving. PS. Auto setting on my crockpot is one hour on high and then the rest on low.

- Place the lentils in a large pan of boiling water and simmer for 5 minutes. Add the potatoes and cook for a further 10 minutes or until the potatoes are soft. Drain and return to the pan.
- Chop 7 frankfurters and fry in 1tbsp oil with the onion, carrots, celery, garlic, leek and rosemary until all the vegetables are soft (about 5-10 minutes).
- Add the mixture to the lentils then blend in a food processor, adding a few tablespoons of water to loosen the mixture.
- Pour the soup back into the large pan and add 1-2 cups boiling water and simmer for a minute. Add more water depending on your preferred thickness.
- Finely slice the remaining frankfurters and fry in 1tsp oil.
- Serve the soup with the fried frankfurters on the top.

- Place sausage in a large pot. Cook over medium high heat until evenly brown. Add onion, celery and chopped garlic, and saute until tender and translucent. Stir in lentils, carrot, water, chicken broth and tomatoes. Season with garlic powder, parsley, bay leaves, oregano, thyme, basil, salt and pepper. Bring to a boil, then reduce heat. Cover, and simmer for 2 1/2 to 3 hours, or until lentils are tender.
- Stir in pasta, and cook 15 to 20 minutes, or until pasta is tender.
