Steps:

  • In a skillet, cook bacon until crisp. Remove the bacon; crumble and set aside. Drain, reserving 1/4 cup drippings. In a large bowl, combine the greens, eggs, onions and bacon. Add remaining ingredients to the drippings; bring to a boil. Drizzle over the salad and toss to coat. Serve immediately.

  • In a large salad bowl, combine the lettuce and onion; set aside., Place bacon on a microwave-safe plate lined with paper towels. Cover with another paper towel; microwave on high for 5-7 minutes or until crisp. Using a slotted spoon, remove bacon to paper towels., In a small microwave-safe dish, combine 1-1/2 teaspoons bacon drippings, vinegar, sugar and water. Microwave, uncovered, on high for 45 seconds or until sugar is dissolved; stir until smooth. , Pour over lettuce; sprinkle with salt and pepper. Add bacon and egg; toss to coat.

BLT: Beef, Leek and Tomato Salad - with Bacon Dressing - an extra

Steps:

  • Heat a grill pan or grill to medium-high heat.
  • Bring steaks to room temperature, drizzle with extra-virgin olive oil and season with salt and pepper on both sides.
  • Place the steaks on the grill, cook meat 10 to 12 minutes for pink centers. Turn twice and let meat rest 5 minutes before slicing.
  • While meat cooks, brown bacon in a drizzle of extra-virgin olive oil in a medium to large skillet over medium-high heat.
  • Chop the leeks then soak in a large bowl of water or separate the chopped leeks by running under water. Dry the leeks in a kitchen towel.
  • Place cooked bacon on paper towels to drain. Pour off all but about a tablespoon of bacon drippings then add leeks and wilt down. Season cooked leeks with salt and peppe, to taste.
  • Transfer the cooked bacon to a food processor and add Worcestershire, vinegar, mustard, some black pepper and a splash of water. Turn processor on and stream in 1/2 cup extra-virgin olive oil.
  • On each dinner plate, arrange a bed of shredded romaine and thickly sliced tomatoes. Slice meat against the grain of the steak. Arrange the steak over the sliced tomatoes. Scatter the leeks over the sliced steaks and pour bacon dressing down over the top.

  • Preheat the oven to 400 degrees F.
  • Lay the bacon on a baking sheet, and bake for 20 to 25 minutes, or until crisp. Dry on paper towels and large dice.
  • For the dressing, place the egg yolk, mustard, garlic, lemon juice, salt, and pepper into the bowl of a food processor fitted with steel blade. Process until smooth. With the food processor running, slowly pour the olive oil through the feed tube (as though you were making mayonnaise) and process until thick. Add 1/2 cup grated Parmesan and pulse 3 times.
  • Toss the lettuce with enough dressing to moisten well. Divide the lettuce among 4 plates. With a very sharp knife or a vegetable peeler, shave the Parmesan into large shards and arrange them on the lettuce. Sprinkle the diced bacon over the salad and serve.

  • For the French dressing: Plop the ketchup, yogurt, vinegar, mustard, sugar, paprika, onion and salt to taste into a high-speed blender. Puree until smooth. Use immediately or transfer to an airtight container and store in the refrigerator for up to 2 weeks.
  • For the pea and bacon salad: Put the bacon in a large cold skillet and cook over medium heat until crisp, 4 to 5 minutes. Drain on a paper towel-lined plate, and set aside.

BACON, LETTUCE AND SUN-DRIED TOMATO SALAD

The herbs in this salad, along with the bacon, sun-dried tomatoes and the homemade balsamic vinegar dressing, turn this salad into something special. From "At Home Entertaining" by Jorj Morgan. You will have some leftover dressing...use the extra for tomorrow's salad. You want to use only enough to lightly coat the greens.

Bacon, Lettuce and Sun-Dried Tomato Salad image

Steps:

  • Cook the bacon in a skillet over medium high heat. Remove the pieces with a slotted spoon. Drain on paper toweling.
  • Remove the sun-dried tomatoes from the oil. Reserve the oil for another use.
  • Combine the salad greens and herbs in a large bowl.
  • Whisk together the red wine vinegar and balsamic vinegar. Slowly whisk in the olive oil.
  • Peel and finely chopped the hardboiled eggs.
  • Toss the lettuce with enough dressing to just coat the leaves. Toss with the bacon and sun-dried tomatoes. Garnish with the chopped egg. Season with salt and pepper and serve.

8 cups salad greens (use any combination...I use arugula, spring mix, baby spinach and romaine)
1/2 cup green onion, chopped (6 to 8 onions)
2 tablespoons fresh basil leaves, chopped
2 tablespoons fresh cilantro leaves, chopped
2 tablespoons fresh tarragon leaves, chopped
1 cup red wine vinegar
1 tablespoon balsamic vinegar
1/2 cup olive oil
4 large eggs, hardboiled
salt & freshly ground black pepper
