SIMPLY DELICIOUS RANCH CHICKEN SALAD

Ranchy goodness mixed with chicken, cucumber and red onion. An instant favorite of anyone who tries it. Serve on whole wheat tortillas with baby spinach and diced tomatoes or eat it by itself.

Simply Delicious Ranch Chicken Salad image

Steps:

  • Place chicken in a saucepan; add water to cover. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until chicken is tender and no longer pink in the center, about 15 minutes. Remove chicken, let cool, and shred or cut into bite size pieces.
  • Combine the chicken, red onion, cucumber, garlic, and ranch dressing in a large bowl. Season with pepper to taste.

Lighter Chicken Salad image

Steps:

  • Bring 1 inch salted water to a boil in a large skillet with a tight-fitting lid. Add chicken, cover, and reduce heat to medium-low. Simmer 5 minutes. Off heat, let chicken (still covered) steam until cooked through, 12 to 14 minutes. Remove from skillet; when cool enough, cut into chunks or shred with 2 forks.
  • In a medium bowl, stir together mayonnaise, buttermilk, mustard, lemon juice, and hot sauce. Stir in chicken, celery, onion, and parsley; season with salt and pepper. Serve on bread or over greens.

Lighter Ranch Chicken Salad image

Steps:

  • Preheat oven to 375 degrees. Place a wire rack on a large rimmed baking sheet; set aside.
  • In a food processor, pulse bread until coarse crumbs form. Add oil, and season with salt and pepper; pulse just until moistened. Transfer crumbs to a plate.
  • In a shallow dish, toss chicken with 1/4 cup ranch dressing. Dredge chicken in crumbs, pressing to adhere; transfer to prepared rack. Bake until chicken is opaque throughout, 30 to 35 minutes (tent with foil if browning too quickly).
  • In a large bowl, combine lettuce, radishes, cucumber, and carrots. Top salad with sliced chicken; drizzle with remaining dressing.

1 tablespoon olive oil
