LIMA BEAN SALAD
Lima beans are almost always on the menu when you visit a traditional Gullah or Low Country soul food restaurant. They've usually been slow-cooked for hours with a smoked turkey leg or ham hock. To be honest, I'm not a huge fan of that way of cooking them, so this salad is my favorite way to serve lima beans. I love the tangy vinaigrette and the colorful crunchy vegetables added to the beans. This is another one of those recipes that gets better the longer it sits in the fridge.

Steps:
- For the salad: Combine the lima beans, broth and bacon in a small saucepan. Bring to a boil. Reduce the heat and simmer until the lima beans are tender and cooked through, adding the corn during the last 2 minutes of cooking, 10 to 12 minutes. Remove and discard the bacon and drain the beans and corn. Set aside to come to room temperature.
- Make the vinaigrette: Sprinkle the garlic with about 1/4 teaspoon salt. Use the flat side of a chef's knife to press down on the garlic and drag it across the cutting board. Keep mincing, pressing and dragging the garlic until it forms a paste. Place the garlic paste in a large bowl. Add the vinegar, honey and celery seeds. Gradually whisk in the oil until combined. Season with salt and pepper.
- Add the lima beans and corn, tomatoes, peppers and onions and toss until combined. Season with additional salt and pepper if needed. Serve at room temperature.
COUNTRY LIMA BEANS WITH SMOKED PORK HOCKS
Country comfort food! Long, slow cooking yields the most tender meat and the highest flavor. From an old newspaper clipping.

Steps:
- Rinse beans; put into a large pot with 2 quarts cold water.
- Heat to the boil; simmer two minutes.
- Remove from heat; cover and let stand for one hour.
- Add salt.
- Reheat to boil, reduce heat and simmer, covered, until beans are tender (about an hour).
- Drain and reserve liquid.
- Combine molasses, sugar, mustard and tomato sauce.
- Stir in 2 cups reserved cooking liquid; add to beans.
- Stir in smoked pork hocks and onion.
- Turn ingredients into a 2 1/2 quart casserole or a bean pot; bake at 300F for 3.5 to 4 hours.
- Add more cooking liquid if needed.
- Stir halfway through cooking.

LIMA BEANS WITH BACON
I was trying to re-work my frozen lima beans into something I could entice the kids with and came up with this dish. It was so simple with its zesty sweet flavor, and the kids ate every bite.

Steps:
- Boil the lima beans according to package (about 10-12 minutes-I used pressure cooker for 5 minutes).
- While beans are cooking fry bacon in a medium frying pan on medium heat until crisp and drain.
- Add the red onion and cook additional 5 minutes.
- Add lima beans, salt, and pepper to pan.
- Sprinkle brown sugar and stir.
- Add a couple Tablespoons water for saucier texture.
- Serve.

- Heat a large saucepan over medium heat, and spray with cooking spray. Saute onions until soft and translucent. Pour in chicken broth, and bring to a boil. Add lima beans, and enough water just to cover. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, until beans are tender.

- In a slow cooker, cover beans with cold water; let sit overnight. Drain beans and return to slow cooker.
- Season turkey with salt and pepper. In a large skillet, heat 1 tablespoon oil over medium-high. In two batches, brown turkey on all sides, adding 1 tablespoon oil for second batch, about 10 minutes total. With a slotted spoon, transfer meat to slow cooker. Return pan to heat and add 1 tablespoon oil, onion, and garlic. Cook, stirring occasionally, until onion is translucent, 4 minutes. Add wine and bring to a boil, stirring and scraping up any browned bits with a wooden spoon. Boil 1 minute, then add mixture to slow cooker.
- Add 1 1/2 cups water and lemon zest to slow cooker. Season with salt and pepper. Cover and cook on high 6 hours. (Beans should be tender and turkey will be just beginning to fall apart.) Add lemon juice and stir. Serve stew with lemon wedges.

- Wash beans and place a large pot with enough water to cover. Bring to a boil over high heat and boil for 3 to 5 minutes. Turn off heat, cover pot, and let sit for 1 hour. After an hour, drain beans, and set aside.
