MARINATED ORANGE ROUGHY

- Cut fillets into four pieces if necessary; set side. In a large bowl, combine the orange juice, ketchup, oil, soy sauce, lemon juice and pepper. Remove 1/4 cup for basting; cover and refrigerate. Pour remaining marinade into a large resealable plastic bag; add fillets. Seal bag and turn to coat; refrigerate for 2 hours, turning once or twice., Drain and discard marinade. Place fillets on a broiler pan coated with cooking spray. Broil 4-6 in. from the heat for 5-6 minutes on each side or until fish flakes easily with a fork, basting occasionally with reserved marinade. Sprinkle with sesame seeds.

- Place fillets in a 13x9-in. baking dish. In a small bowl, whisk remaining ingredients until blended. Pour 1/2 cup marinade over fillets; turn to coat. Refrigerate 1 hour. GARLIC PARMESAN ORANGE ROUGHY
Steps:
- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
- Place the orange roughy filets on the broiler pan and squeeze the lemon over the top of the fish. Broil the filets in the preheated oven for about 6 to 8 minutes.
- Combine parmesan, butter, dijionnaise, garlic, and salt in a small bowl. Remove the fish from the oven and spread the cheese mixture on top of the filets. Sprinkle with paprika. Broil until the topping is lightly browned and the fish flakes easily with a fork, about 3 minutes.

I made this up one night when I had some fresh fish, and not too much in the fridge that I could add to it. I served it with garlic & parmesan couscous, peas, and a salad.

- Preheat oven to 450.
- Rinse filets in water, pat dry with paper towels.
- Set aside.
- Melt butter in a small saucepan.
- Add garlic, and white wine, stirring until all is mixed together.
- Spray a small square glass baking dish with cooking spray.
- Sprinkle both sides of fish with salt and pepper, and lay fish filets in the dish.
- Lay onion rings on top of fish, and pour garlic butter mixture over everything.

ORANGE ROUGHY MARGARITA
A tantalizing recipe that was quick to make and delicious to boot! My wife and I enjoyed it with quiet romantic music, candlelight, and flowers. The taste and experience was, needless to say, memorable! I hope you like it too! I am lazy at times and instead of making my own salsa, I used store-bought brand name salsa. It was good as well, while saving me time and work.

- Place fish in a glass dish large enough to have a single layer of fillets.
- Combine tequilla, triple sec, lime juice, salt, garlic, and 2 teaspoons of oil.
- Pour over fish and rub all over the fillets.
- Cover and marinate for 1 hour at room temperature or 3 hours in the refrigerator - turning occasionally the fillets.
- Shortly before serving time, combine salsa ingredients in a serving bowl.
- Heat oiled grill to very hot.
- Remove fish from the marinade.
- Pat dry.
- Cook on the well oiled grill (or use fish cooking basket) for about 4 minutes per side or until fish is opaque.
- Meanwhile boil marinade in saucepan for about 2 minutes.
- Strain marinade.
- Spoon a little of the marinade over fish fillets on the serving plate.
- Serve with fresh tomato salsa.
