Steps:

  • Preheat the oven to 375 degrees F.
  • Cookies:
  • In a medium bowl combine the flour, baking powder, and salt. Set aside.
  • In the large bowl combine the butter and the sugar. Using an electric mixer beat the butter and sugar until light and fluffy, about 3 minutes. Add the eggs, 1 at a time, beating until incorporated. Add the ricotta cheese, lemon juice, and lemon zest. Beat to combine. Stir in the dry ingredients.
  • Line 2 baking sheets with parchment paper. Spoon the dough (about 2 tablespoons for each cookie) onto the baking sheets. Bake for 15 minutes, until slightly golden at the edges. Remove from the oven and let the cookies rest on the baking sheet for 20 minutes.
  • Glaze:
  • Combine the powdered sugar, lemon juice, and lemon zest in a small bowl and stir until smooth. Spoon about 1/2-teaspoon onto each cookie and use the back of the spoon to gently spread. Let the glaze harden for about 2 hours. Pack the cookies into a decorative container.

  • Preheat oven to 350 degrees F (175 degrees C). Combine the 2 teaspoons of lime juice with the milk, let stand for 5 minutes.

  • Preheat oven to 350 degrees F.
  • In a food processor work bowl, add sugar and lime zest. Process until sugar and zest are well mixed, about 20 seconds. Scrape into a large mixing bowl. Reserve about 1/2 cup of lime sugar in a separate bowl for later use.
  • Add flour, baking powder and salt into food processor and pulse briefly to mix. Add cold butter into food processor with flour mixture and 3 ounces of the pistachios. Process with short pulses until mixture resembles cornmeal and no large lumps of butter remain, about 10 seconds. Add remaining pistachios and mix briefly, about 5 seconds. Pour this mixture into the sugar and lime mixture in the large mixing bowl and set aside.
  • In a medium bowl, mix egg yolks, vanilla extract, almond extract, and lime juice together.
  • Using an electric mixer with a paddle attachment, pour in the lime/sugar and flour/butter mixture and stir until combined, about 15 seconds. Then, while the mixer is still running, slowly add egg/lime juice mixture and mix until well combined and dough pulls away from the sides of the bowl, about 15 to 30 seconds.
  • Scrape the dough into a large bowl and refrigerate until cold, but not solid, about 30 minutes. Use an ice cream scoop to scoop the dough onto parchment-lined cookie sheets. Take the dough balls and roll the tops into the reserved lime sugar. Use the bottom of a water glass to press the cookies flat, about 1/4-inch thick. I found this recipe in a newspaper. It makes very soft, lime flavored cookies. You might want to taste the lime juice you're using - I think the strength can vary, because, once when I made it, I couldn't taste the lime at all! The other times it has come through just fine. You can also substitute lemon juice. Note: I just made these cookies again and ended up with wonderfully soft, fluffy sugar cookies (read: no lime flavor at all). I'm hereby considering this recipe under construction, and may edit it to reflect some tinkering (with extracts or concentrates).

Steps:

  • Cream butter and sugar 3-4 minutes.
  • Add egg and beat until JUST combined.
  • Add zests, lime juice and extract.
  • Add flour and cornmeal and mix until well blended.
  • Cover with waxed paper or plastic wrap.
  • Form into a disc (why? Beats me) and chill, at least, 1 hour.
  • Roll heaping teaspoons of dough into balls and place on baking stones (or lined baking sheets) 3" apart.
  • Dip bottom of a medium drinking glass into a bowl filled with the cornmeal and flatten balls with the bottom of the glass until dough is 1/4" thick.
  • Bake cookies at 350 until golden brown around the edges, about 14-16 minutes.
