SAUTEED CAULIFLOWER

Slightly adapted from the cookbook The Art of Simple Food. You can add chopped fresh parsley and/or minced garlic near the end if desired, but it really isn't necessary.

Sauteed Cauliflower image

Steps:

  • Remove the base of the stem of the cauliflower with a sharp knife.
  • From the top down, cut the cauliflower into 1/4 inches slices. (Some of the slices will crumble, but those still taste good, they just don't look as pretty.).
  • Heat 2 Table olive oil over medium-high heat in a large nonstick frying pan.
  • Add one batch of the cauliflower (in a single layer) and cook until brown on the first side. Use a spachula to flip over the cauliflower.
  • Fry the cauliflower until brown on the second side, adding more olive oil if needed.
  • At this time, I usually add 2-3 Table. water, turn over the cauliflower again, cover and cook for several more minutes.
  • Repeat on the second side if the cauliflower is not quite tender. The cauliflower tastes best if it has gotten very brown.
  • Sprinkle with salt.
  • Remove the first batch, keeping warm, and doing a second and third batch (if you still have cauliflower to cook) until all of the cauliflower has been sauteed.

Cauliflower-and-Mushroom Roast image

Steps:

  • Preheat oven to 450 degrees with racks in upper and lower thirds. Brush cauliflower on both sides with 4 tablespoons oil; spread in a single layer on a rimmed baking sheet. Toss mushrooms with 3 tablespoons oil; spread on a second sheet. Toss bread with remaining 1 tablespoon oil. Season all with salt and pepper.
  • Place cauliflower on top rack; roast 10 minutes. Add mushrooms on bottom rack; roast 15 minutes more. Flip cauliflower and mushrooms. Sprinkle bread over mushrooms; roast 10 minutes more. Remove from oven; transfer mushrooms and bread to sheet with cauliflower. Top with cheese; roast until melted and bubbly, 5 to 7 minutes more. Serve immediately.

Steps:

  • Place cauliflower florets in a large glass bowl or casserole dish, and cover with plastic wrap. Poke a few holes in the plastic with a knife. Cook in the microwave for 5 to 7 minutes, or until tender.
  • In a cup or small bowl, stir together the mayonnaise, and Dijon mustard. Spread over the top of the cauliflower. Sprinkle shredded cheese over the top. Return to the microwave, and cook just until cheese has melted, about 2 minutes.

Steps:

  • Rinse and remove leaves from cauliflower. Place whole head in a small amount of boiling salted water. Cover and cook for 20 minutes or until just tender. Drain thoroughly. Keep warm.
  • Meanwhile, cook fresh mushrooms in butter until tender. Blend in flower, salt and pepper. Add evaporated milk all at once. Cook, stirring constantly until thickened and bubble. Stir in cheese and mustard. Heat until cheese melts. Place warm cauliflower on platter. Spoon some of sauce over it. Sprinkle with parsley. Pass remaining sauce.

Lite Cauliflower with mushroom sauce image

Steps:

  • Put steamed cauliflower florets in a baking dish, single layer.
  • Melt marg in a skillet, add mushrooms, green onion and saute for 1 minute.
  • Stir in flour,salt& pepper, cook stirring constantly until the flour is incorpoarated with the mushrooms& onion.
  • Slowly add milk and cook until slightly thickened.
  • Pour sauce over cauliflower and sprinkle with parmesan.
  • Bake 450f for about 15minutes or until the top is nicely browned.

  • Arrange Cauliflower in a non-stick baking pan; set aside.
  • Melt butter in small sauce pan; add mushrooms and scallion and saute for 1 minute. Stir in flour, salt & pepper; cook, stirring continuously,pour in milk and cook until slightly thickened.
