MINIATURE PEANUT BUTTER TREATS

This recipe is one of my family's favorites, and I make the treats a lot, especially at Christmas. I have three children and eight grandchildren, and every one of them loves those "peanut butter thingies," as the grandchildren call them! -Jodie McCoy, Tulsa, Oklahoma

Miniature Peanut Butter Treats image

Steps:

  • In a bowl, combine the butter, sugars, egg, peanut butter and vanilla; beat until smooth. Combine the flour, baking soda and salt; gradually add to creamed mixture. Cover and chill for 1 hour or until easy to handle., Roll into 42 walnut-sized balls; place in greased miniature muffin cups. Bake at 375° for 8-9 minutes. , Remove from oven; gently press 1 peanut butter cup into each cookie, forming a depression. Cool for 10 minutes before removing to wire racks to cool completely.

Easy Peanut Butter Cups image

Steps:

  • Line two 12-cup mini muffin pans with paper liners; set aside. In a microwave-safe bowl, combine white chocolate and peanut butter. Microwave, until almost melted, 1 to 1 1/2 minutes, stirring halfway through. Set aside to cool slightly.
  • Meanwhile, place semisweet chocolate in another microwave-safe bowl. Microwave, stirring once or twice, until almost melted, 2 to 3 minutes.
  • Dividing evenly, use a spoon to layer semisweet chocolate and peanut-butter mixture into liners, beginning and ending with chocolate; sprinkle with peanuts. Place muffin pans in freezer until peanut butter cups are firm, about 15 minutes. Bring to room temperature before serving.

Steps:

  • Coat a small cup muffin tin with cooking spray. In a microwave-safe bowl, microwave chocolate with butter and oil, stirring often, until melted, 1 to 2 minutes. Pour about a tablespoon of the chocolate mixture into each muffin cup.
  • Melt peanut butter in microwave, 30 to 40 seconds. Spoon about 1 teaspoon of melted peanut butter over chocolate in each muffin cup. Top with another tablespoon of chocolate.
  • Chill in refrigerator 30 minutes, until set.

Steps:

  • Combine butter, sugars, egg, peanut butter and vanilla in mixing bowl; beat until smooth.
  • In separate bowl, combine flour, baking soda and salt; add to creamed mixture.
  • Cover dough and chill.
  • When cold enough to handle easily,roll in small (walnut-sized) balls, place each ball in greased miniature muffin tins.
  • Bake at 375 degrees for 8-9 minutes.
  • Remove from oven, gently press 1 peanut butter cup into each cookie to make depression. (I placed the candies in the freezer to make them easier to handle when placing in the cookie.).
  • Cool in pan 10 minutes; remove from pan and cool on rack.
  • Store in cool place until serving time.

  • In a small bowl, combine the peanut butter and maple syrup, and stir until well blended. Fill a mini cupcake pan with liners or arrange mini cupcake liners on plate(s) like I did.
  • Melt the chocolate (I did this in the microwave in 30-second bursts, stirring after each one, or you can use a double boiler on the stove).
  • Fill the bottom of each cup with 1 teaspoon of the melted chocolate. Add a small dollop of the peanut butter mixture in the center (about 1/2 teaspoon), then top it with another teaspoon of the chocolate.
  • Freeze the candies for 5 minutes. Sprinkle sea salt lightly over the tops (if using), then freeze until firm, about 25 minutes more. Now they’re ready to eat!
