BAKED CHEESY CAULIFLOWER

Easy, delicious side dish of cauliflower with cheese.

Baked Cheesy Cauliflower image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a baking dish with cooking spray.
  • Place cauliflower in a microwave-safe bowl with 1/2 cup water. Microwave until tender-crisp, about 5 minutes. Drain and transfer to the prepared baking dish.
  • Whisk egg and flour together in a bowl. Add milk, salt, and pepper. Pour over cauliflower florets. Sprinkle Cheddar cheese and paprika on top.
  • Bake in the preheated oven until cheese is melted and cauliflower is soft, 30 to 40 minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until very tender, 15 to 20 minutes. Transfer cauliflower to a bowl, mash, and strain excess water.
  • Mix cauliflower, sour cream, Cheddar cheese, ranch dressing mix, onion powder, and garlic powder together in a 9-inch baking dish; top with butter.
  • Bake in the preheated oven until bubbling, 30 to 45 minutes.

  • Prep cauliflower. Bring a large pot of water to boil. Once boiling, add cauliflower florets (24 ounces) and blanch for 3 minutes. Drain water, and wrap drained cauliflower in clean kitchen towels while we prep the rest. Once cool enough to handle, give the cauliflower a gentle squeeze to release as much liquid as possible, without mushing the cauliflower.
  • Make the sauce. Make sure the pot is dry, and heat over medium heat. Add butter (2 tablespoons) once melted add minced garlic (3 cloves) and cook until fragrant (about 2 minutes). Add the xanthan gum (1 teaspoon) and stir until it dissolves into the butter. Add heavy cream (1/3 cup), milk (1 1/2 cup or almond milk), cream cheese (4 ounces), tabasco (1/2 teaspoon ), and bring to a simmer. Remove from heat, and add cheese (1 cup ). Stir until cheese completely dissolves.
  • Combine. Add the cauliflower back to the pot with cheese sauce, along with 1/2 of the bacon and green onions. Stir to coat the cauliflower. Spread cauliflower into a 9x13 baking dish (I used a 9" cast iron). Sprinkle remaining cheese (1 cup) on top, along with remaining bacon and green onions.

  • Transfer the cauliflower to a small 1.5 quart (1.4 L) casserole dish in a single layer. (Line the pan unless it's glass or stoneware. If there's too much cauliflower to fit in a single layer, roast on a larger baking sheet instead.) Roast in the oven for 15-20 minutes, until crisp-tender.
  • Meanwhile, in the same bowl, whisk together the sour cream and heavy cream, until smooth. Stir in the minced garlic, half of the cheddar cheese, half of the bacon bits, and half of the green onions. If desired, season sauce with sea salt and black pepper. (Don't oversalt - it will get more salty as the cheese melts later.)
