LOBSTER AND JERUSALEM ARTICHOKE CHOWDER image

Steps:

  • Fill a large pot about 2/3 full with water. Add salt, scraps of thyme, and 1 bay leaf. Bring to a boil and add lobster back side down. Cover and boil for 6 min. Turn lobster over and boil for another 6 minutes. Remove lobster and let cool until you can handle it. Do not discard cooking water. Once cool enough, pick meat out of lobster, chop into small pieces, and set aside. Smash the shells of the lobster and return to the cooking water. Continue to boil. Cook the bacon in a large soup pot. (If you use turkey bacon, you will need to add a little oil). Stir in the onion, bay leaf, chopped thyme, and butter. When the onions are translucent, add the Jerusalem Artichokes and 4 cups of the lobster cooking liquid. Bring to a boil, reduce the heat, and simmer until the artichokes are tender, about 10 minutes. Using a slotted spoon, reserve some of the chunks- about ½ a cup. Blend the rest in a blender or food processor until smooth. Return all to soup pot. Add lobster meat and cream. Simmer for 5 minutes and season with salt and pepper.

Crispy Jerusalem artichokes with roasted garlic & rosemary image

Steps:

  • Heat oven to 180C/160C fan/gas 4. Soak the artichokes in cold water for 20 mins or so to loosen any dirt, then scrub them with a scourer, being sure to remove any grit. Halve the small ones and quarter the bigger ones, and put them in a roasting tin with the split garlic bulb and rosemary. Coat everything with the oil and season. Roast for 45-50 mins until tender inside and crispy outside.
  • To finish, squeeze the softened garlic cloves from their skins and toss with the roasted artichokes, along with the mace, butter and lemon juice.

This is a super-easy way to cook these vegetables if you've never tried them before and by far my favorite. Jerusalem artichokes, or sunchokes, are starchy tubers like potatoes and turnips. When roasted, the skin becomes flaky and the flesh becomes tender, but the taste of a sunchoke is slightly nutty and sweet. Cooked sunchokes are best when eaten within 2 days. When raw, they store well in your fridge's vegetable bin, wrapped loosely in a paper towel. Enjoy!

Roasted Jerusalem Artichokes (or Sunchokes) image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scrub Jerusalem artichoke tubers and cut out eyes. Cut tubers into 1-inch pieces.
  • Mix olive oil, thyme, garlic, and sea salt together in a large bowl; add Jerusalem artichoke pieces and toss to coat. Arrange coated pieces in one evenly-spaced layer on a baking sheet.
  • Roast in the preheated oven until Jerusalem artichokes are tender, 35 to 45 minutes.

I just pulled up 20 pounds of sunchokes from one plant. A knobby tubers look a lot like ginger root is in the sunflower family. Its nutty in flavor and has a nice crunch No need to peel but does need a very good scrubbing with a stiff brush. Sunchokes also contain vitamin C, phosphorus and potassium and are a very good source of iron. This tuber is very rich in inulin, a carbohydrate linked with good intestinal health due to its prebiotic (bacteria promoting) properties. These benefits come at a healthy price; the food can have a potent wind-producing effect. Inulin a type of carbohydrate that is a derivative of fructose. We don't have the digestive enzymes for this, and foods that we can't digest cause gas. Which is why the seeds play a role in this recipe. They are in for flavor as well as helping with the bloating and gas. It's volatile oils reacts efficiently in treating the gastro-intestinal tract. The main properties of the herb make it an effective stimulant of gastric secretion, it regulates stomach functions; it has anti-inflammatory properties for the intestines; it is a gastric and intestinal antiseptic and diuretic. The seeds help in stimulating food appetite and digestion, As it does your breath good! Steps:

  • Preheat oven to 425.
  • Pour oil on 2 sheet pans. Place half of the drained chokes on each pan tossing to coat with oil.
  • On a wet cutting board place the seeds and chop with a sharp knife. To grind and leave some whole.
  • Add remaining ingredients to the seeds, toss to combine.
  • Distribute the seeds mixture on the sunchokes.
  • Roast for 15 minutes flip roast 15 more minutes. Or until chokes are crisp and tender inside.Just like a roasted potato.
  • Garnish with additional seeds and rosemary.

  • Twist the bodies from the lobster tails. Using scissors, cut along the underside of the tails and remove the meat. Halve the tails lengthwise and discard the dark intestinal veins. Crack the claws and legs and remove the meat. Cut all of the lobster into 1 1/2-inch pieces. Transfer to a plate and refrigerate until chilled.
  • Squeeze the juice from the lemon halves into a large bowl of water. Working with 1 artichoke at a time, snap off the dark green outer leaves. Using a serrated knife, cut off all but 3/4 inch of the remaining leaves. Peel and trim the bottom and stem of the artichoke. Halve the artichoke and scoop out the furry choke with a spoon. Cut the artichoke halves in thirds and rub with the lemon. Add both the artichokes and the lemon halves to the lemon water.
  • In a large skillet, melt 1 tablespoon of the butter in 2 tablespoons of the olive oil. Drain the artichokes and pat dry. Add them to the skillet and season with a generous pinch each of salt and pepper. Cook over moderate heat, undisturbed, until well browned on the bottom, about 7 minutes. Turn the artichokes and cook, tossing occasionally, until tender, about 7 minutes longer. Transfer the artichokes to a plate and wipe out the skillet.
