LORI'S CALICO CHILI
This is a hearty, spicy chili,perfect for winter nights. Cornmeal Cheddar biscuits are a great combination.

Steps:
- 1. Brown meat with onions, pepper, and celery. Drain. I put it in a dutch oven at this point.
- 2. Add all other ingredients. Allow to simmer until the flavors marry. About 30 minutes-1 hour.
LORI'S SPECIAL SPINACH
Steps:
- Heat olive oil in medium stock pot, when hot add spinach and chopped garlic. Cook until fully wilted, then add chicken broth and reduce. Season with salt and pepper.
- Garnish with the Parmesan and serve immediately.
LORIE'S PRIZEWINNING CHILI
I won a chili cookoff with this recipe. What's special about it? I don't know. I just made it the way I always do, with the exception of noting the ingredient amounts and method in case anyone wanted it. It's not really a "secret" chili. It is just made the way I like chili. Oh, and if you're one of my Texas relations, don't call me on the phone about the can of beans. You know I like them, so give it up. They're "optional." TNT OOPS! Lazyme is correct, the green chiles go in at step 2 with the "wet ingredient add" (if you sub any wet ingredient besides tender cooked beans, add it there at step 2). Steps:
- In a large pot, cook the onions in lard (or oil) until translucent. Add the garlic and beef and cook over high heat until beef is seared and brown.
- Add the green chilies, salsa, tomato puree, diced tomatoes, broth, tomato paste, salt and pepper, stirring until tomato paste blends in to the mixture.
- Reduce heat, add half the cumin, onion powder, garlic powder, cayenne pepper and chili powder and simmer over low heat until beef is tender, adding a little more beef broth or water if your fire ends up to high and the chili gets too thick.
- Add the remaining spices when the beef is tender and check for saltiness adding some more if needed (estimated cook time depends on the tenderness of your beef). Stir in the beans at this point if you like them and simmer for 10-15 minutes more.
- Adjust spiciness if you like, before serving.

Steps:
- Prepare shrimp.
- In a saucepan combine the reserved shells, water, garlic, chiles, rosemary and fennel seeds.
- Bring to a boil. Reduce. Simmer 30 minutes.
- Strain. Return to saucepan.
- Return to a boil. Reduce to 1 1/2 cups (about 10 minutes).
- Add sherry. Bring to a boil. Reduce to 2 tablespoons (about 30 minutes).
- Add bell pepper. Cook 2 minutes.
- Add shrimp, onions, butter, salt and pepper. Heat until shrimp are just pink. Serve.

LORI'S MEXICAN CHILI CROCKPOT SOUP
Lauralie41 (Lori) gifted me with a RecipeZaar premium membership renewal and I wanted to thank her for her kindness! Please feel free to change the ingredients to personalize it to your tastes. If you don't want to use the crockpot, just make everything in a large pot, cover and let simmer on low for at least an hour. I have included some of Lori's favourite ingredients in this hearty soup and I hope that she and you like it. Enjoy!

- In a nonstick pan, lightly brown ground beef. If you are using anything other than extra lean beef, you may want to strain off the fat now. Add onion, celery and garlic and saute for about 5 minutes.
- Add taco seasoning and beef broth and simmer for 15 minutes. This will infuse a lot of flavour into the ground beef. Meanwhile, add remaining ingredients to the crockpot. You can add the liquid from the beans or not - I did.
- Add ground beef mixture to the crockpot. If you find that there isn't enough liquid, add more beef broth. I cooked it on low for 6 hours, but I can't imagine why it can't be cooked longer. The longer you cook soups in a crockpot, the better they taste!
- If you can taste the soup partway through, you may want to season it to your tastes at this point. Add some freshly ground pepper, chili powder or any of your favourite spices or seasonings.
- Top with grated cheese and diced avocado and tortilla chip pieces if you wish.

This recipe never yields leftovers at our house! We add hot sauce and other spicy things to make it muy calente! I don't know who Lori is, but she made some terrific chili! I got this recipe off the Cook'n On the Go software program.

Steps:
- Brown hamburger and onion.
- Drain grease.
- In large soup pot, put browned ground beef and all the other ingredients.
- Add enough chili powder to make it hot to your taste.
- Cook until celery is tender, about 30- 40 minutes.
- Serve with cornbread or oyster crackers.
- I like to also use jalapeno or other types of peppers depending on what I may have on hand.
- Some people like to add diced carrots to their chili too.
