LOW-CAL STUFFED FRENCH TOAST

Steps:
- 1. In bowl, mix together cream cheese and 2 tbsp preserves. Using a knife, make a pocket in each bread slice, but don't cut all the way through.
- 2. Fill each pocket w/ 1 tbsp cream cheese mix. In another bowl, combine egg whites, egg, milk, vanilla, cinnamon and nutmeg.
- 3. Spray a lg skillet w/ cooking spray. Place over medium heat. Dip bread slices into egg mix, coating both sides. Place bread in skillet. Cook about 3-4 min, turning once until golden brown. In microwaveable bowl, microwave 1/2 cup preserves until melted. Spoon preserves over french toast.
REDUCED FAT FRENCH TOAST
This is an easy variation on the basic French toast recipe, except it uses reduced fat substitutes! Serve with fruit or sugar-free maple syrup.

A deliciously low-fat French toast recipe. For a change of taste, top fruit and cream cheese-filled French toast with a drizzle of maple syrup in place of the honey or preserves.

- In a small bowl stir together cream cheese and the 2 tablespoons of preserves. Using a serrated knife, cut a pocket in each bread slice by making a cut in the crust top of each slice from the top almost to the bottom. Fill each pocket with some of the cream cheese mixture.
- In a shallow bowl beat together the egg whites, whole egg, milk, vanilla, and apple pie spice. Coat an unheated nonstick griddle or large skillet with cooking spray. Preheat over medium heat.
- Dip bread slices into egg mixture, coating both sides. Cook bread slices on hot griddle about 3 minutes or until golden brown, turning once to cook second sides.
- Meanwhile, in a small saucepan heat the 1/2 cup fruit preserves of your choice (if using) until melted, stirring frequently. If desired, sift with powdered sugar. Serve melted preserves or honey with French toast.

BLACKBERRY-STUFFED FRENCH TOAST
Whenever you have a little extra time to simmer berries into a simple compote, do - then try stuffing it into hearty French toasts and dusting them with confectioners' sugar. They'll almost remind you of a jelly doughnut, even more so if you use brioche hamburger buns as your bread of choice. (But regular white sandwich bread, challah or any other enriched bread works, too.) You can adjust the sugar in the berries, depending on how sweet they are, and, if you prefer a smoother compote, press the cooked fruit through a mesh sieve once cooled to remove any seeds.

- Place the berries, 1/3 cup/70 grams granulated sugar, the lemon juice and 1/4 teaspoon salt in a small saucepan. Roughly crush the berries with the back of a fork to help release some of their juices.
- Bring to a boil over high heat, then reduce heat to medium-low, cover with a lid and cook at a strong simmer, stirring occasionally to ensure the berries never stick to the bottom and burn, until the sauce has thickened and reduced by half, about 20 minutes. Remove from the heat and allow to cool and thicken for another 10 minutes.
- In a large mixing bowl, whisk to combine the eggs, milk, rum, vanilla, a pinch of salt and the remaining 3 tablespoons/30 grams granulated sugar; set aside.
- Lay 4 pieces of bread out on a plate or tray, and divide the cooled fruit across the bread (about 2 to 3 tablespoons each), leaving roughly 3/4-inch of space around the edges of the bread. Top with the remaining 4 slices of bread, and press down lightly to adhere.
- Heat a large frying pan or griddle over medium-high and melt enough butter to coat the bottom. Just as the butter begins to bubble, float a sandwich on top of the egg batter for 3 seconds, then flip to soak the other side for 3 more seconds. Hold the sandwich over the bowl for 10 seconds to allow any excess batter to drip off, then transfer it to the hot pan. Repeat with as many sandwiches as will fit in your pan; you may need to do this in batches. Cook until deep golden brown, 1 to 2 minutes per side, adding butter to the pan as needed. Transfer to plates and dust generously with confectioners' sugar.

- Peel the peaches: Bring a large pot of water deep enough to cover the peaches to a gentle boil. Carefully drop in the peaches, let boil for 1 minute, then remove with a slotted spoon and plunge immediately into an ice batch to stop the cooking. - Prep: To make the filling mix, the cream cheese with your choice of sweetener and set aside. In a shallow dish, whisk the eggs and milk together. On a large plate, combine 2 tablespoons bread crumbs, 1 tablespoon sugar and 1/2 teaspoon cinnamon.
