DYNAMITE HALIBUT
I created this recipe because my family just loves the dynamite dishes served in sushi restaurants. It's a hit for all ages! This would even be great on top of chicken breasts! Serve atop of sushi rice and a side of steamed broccoli. Garnish with a lemon wedge.

Steps:
- Preheat oven to 375 degrees F (190 degrees C).
- Set an oven rack into the center of the oven.
- Line a baking sheet with aluminum foil and a layer of cooking spray.
- Arrange halibut pieces on the prepared baking sheet so that all pieces are touching.
- Mix the mayonnaise, lemon juice, chili garlic sauce, sugar, soy sauce, and sesame oil in a bowl; fold the mushrooms and onion into the mayonnaise mixture.
- Spread the mushroom mixture over the halibut pieces.
- Squeeze one lemon half over the mushroom mixture; sprinkle with Kosher salt.
- Bake in the preheated oven until almost opaque, 15 to 20 minutes; remove the baking sheet from the oven.
- Raise the oven rack with the baking sheet to the next-highest level switch the oven to broil.
- Continue cooking the fish under the broiler until the top is browned, about 10 minutes.
- Squeeze the remaining lemon half evenly over the fish.
- Sprinkle with sesame seeds and green onions.

LOW FAT ASIAN HALIBUT IN FOIL
Cooking in foil packs is so easy and fun...I might try this recipe for a camping trip. This mild, firm-textured fish can be matched with a variety of flavors. This Asian-accented version is cooked in foil, which is a wonderfully healthy and convenient way to prepare fish, meat and vegetables, locking in all the nutrients. Enjoy with whole grain rice."

Steps:
- Preheat oven to 450 degrees.
- Tear off 4 sheets of foil wrap, 12 inches by 18 inches each. Place halibut fillets in center of foil sheets. Top with vegetables.
- Combine ginger, vinegar and oil in a small bowl. Drizzle a little over each fish and vegetable mound.
- Close the foil packets by bringing the sides up and folding the edge over twice, then sealing the ends in the same way. Leave enough room inside for air to circulate.
- Place foil packets on a large cookie sheet and bake for 15-18 minutes (or you can cook it over a campfire!).

BAKED ALASKA HALIBUT (LOW FAT)
I created this recipe after I started a new high protien diet. I cut out many of the fats and substituted a lot, it took a few times to get it right, but once I did it was delicious and guilt free!

Steps:
- Wash and dry fillets.
- Place in a cassorle dish and sprinkle with salt and pepper.
- Mix all ingredients left in a bowl. Consistency should be "chunky".
- Spread on halibut, top with rest of cheese set aside and bake at 400 degrees or until white and flaky when pierced with a fork.
- Top should be bubbly and browned.
- Enjoy!
