Steps:
- Steam broccoli until tender and chop.
- In a saucepan, combine broccoli, onion, and chicken broth.
- Bring to a boil, reduce heat, and simmer 10 minutes.
- Melt butter in another saucepan.
- Add flour, salt and pepper and stir until smooth.
- Stir in the cream.
- Combine sauce and broccoli and cook over medium heat until heated through.
- Serve hot or cold.

Steps:
- Clean the broccoli and cauliflower, reserving 3/4 cup of the broccoli, and 3/4 cup of the cauliflower florets, chopping the rest fine.
- Saute green onios in margarine until tender.
- Stir in flour, cooking for 1 minute.
- Stir in Chicken stock, chopped broccoli and cauliflower, potatoes, chives, and basil and bring to a boil.
- Reduce heat and simmer until potatoes are tender.
- Process in food processor until smooth.
- Add milk and reserved broccoli and cauliflower florets until boiling again.
- Reduce heat and simmer until florets are crisp-tender.
- Season to taste with salt and pepper.

This authoritatively flavored vegetable bisque comes from Grace Kirschenbaum of Los Angeles. A fresh serrano pepper and Asian fish sauce give this dish a unique flavor.

- Peel potatoes and cut into 1/2-inch cubes. Peel and mince or press garlic. Rinse chili; stem, seed (if desired, for less heat), and thinly slice.
- In a 3- to 4-quart pan over high heat, combine potatoes, garlic, chili, and broth. Cover pan and bring to a boil. Reduce heat and simmer 10 minutes.
- Meanwhile, rinse and coarsely chop broccoli. Add to broth mixture and return to a boil over high heat. Reduce heat and simmer, uncovered, until potatoes and broccoli are tender when pierced, about 5 minutes longer.
- In a blender, puree soup in batches. Return to pan. Add fish sauce to taste. Stir often over high heat until steaming.
- Ladle into soup bowls. Garnish with dollops of sour cream.

- In a medium saucepan, heat margarine over medium heat.
- Add onion and garlic and saute until softened.
- Stir in broccoli and potatoes and saute 1 minute.
- Add broth and bring to a boil.
- Reduce heat and simmer for 15 minutes or until veggies are tender.
- Use a hand blender, food processor or traditional blender to puree the soup, in batches if necessary, until it is smooth.
- Return to the pan and heat through.
- Variation: Substitute cauliflower celeriac, squash or a combination of these veggies.
