LOW-FAT BANANA BREAD

When I substituted some of the butter with applesauce in a previous recipe, it actually made the bread more moist. I put one loaf in the freezer, but had to take it out within 24 hours because the first was devoured!

Low-Fat Banana Bread image

Steps:

  • Mash bananas in a bowl.
  • Add all other ingredients and mix well.
  • Pour into 2 greased loaf pans (or you can pour it all into one, but it rises enough that you can split it in half).
  • Bake at 350 degrees for 50 to 60 minutes, or until toothpick inserted into center of cake comes out clean.

4 very ripe bananas
1 1/2 cups all-purpose flour
1 cup white sugar
2 tablespoons butter, softened
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon baking powder
1 egg
2 tablespoons applesauce

Low-Fat Candy Bar Angel Cake image

Steps:

  • Bake and cool cake as directed on package for angel food cake pan (tube pan). Remove from pan. Split cake horizontally to make 2 layers. (To split, mark side of cake with toothpicks and cut with long, serrated knife.)
  • Beat milk and pudding and pie filling (dry) in large bowl, using wire whisk or hand beater, until blended. Fold in whipped topping.
  • Spread half of the chocolate mixture between cake layers; spread remaining mixture over top. Refrigerate at least 1 hour but no longer than 24 hours. Sprinkle candy over top of cake just before serving. Refrigerate any remaining cake.

Almost No Fat Banana Bread image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.
  • In a large bowl, stir together flour, sugar, baking powder, baking soda and cinnamon. Add egg whites, bananas and applesauce; stir just until combined. Pour batter into prepared pan.

A tweaked version of Baby Kato's recipe #90402 My thanks to Baby Kato for the basic recipe that survived all my tweaks & still produced an excellent cake! The texture is light & the cake is very moist. I made 1/2 the recipe last night & ate some warm from the oven.It was marvelous but the true test of a low fat cake is will it "still love me tomorrow" ;-) I had some for breakfast & it was still just as good with none of that strange texture that often accompanies low fat baked goods. You would NEVER guess that it's low fat! Note: Baking time for 1/2 recipe (8X8 pan) was 32 minutes.

Kittencal's Banana Cinnamon Snack Cake or Muffins (Low-Fat) image

Steps:

  • Set oven to 350 degrees F.
  • Grease a 8 or 9-inch square baking pan or line muffin tins with paper liners.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
  • In a small bowl, whisk together yogurt, banana, oil, egg and vanilla.
  • Pour over dry ingredients, and gently stir with a spatula until JUST blended (do not over mix).
  • Spread the batter into prepared baking pan.
  • Bake for about 25 minutes, or until the top of the cake is light brown, and edges begin to pull away from sides of the pan (bake slightly less time for muffins).
