LUSCIOUS OATY PORRIDGE

An excellent choice on any morning you need comfort food. It's warm, easy, hearty, and healthy- not to mention perfectly sweet and creamy! Start your day off right!

Luscious Oaty Porridge image

Steps:

  • For absolute best, creamiest results, soak the oats overnight in the water, in a small pot.
  • In the morning, bring the oats and water to a boil, stir, lower heat and cover. Let it bubble gently, stirring occasionally, for about 5-7 minutes. Around when it starts to stick, remove from heat and leave covered for 3 minutes. (This ensures that none is stuck to the pot, and also helps creaminess.).
  • Meanwhile, as it's cooking assemble the other ingredients.
  • Pour oatmeal into your serving bowl. Stir in other ingredients, top with additional ground flax if desired, and enjoy immediately!
  • Double or triple accordingly, it comes out perfect.

1/2 cup rolled oats
3/4 cup water (slightly more)
1/4 cup apple, chopped small (this is roughly 1/4 of a medium apple)
2 tablespoons ground flax seeds
2 tablespoons walnut pieces
1 dash ground cinnamon (generous sprinkling)
1/4 cup vanilla-flavored soymilk or 1/4 cup other non-dairy milk substitute
2 -3 teaspoons maple syrup

Steps:

  • Pour the oats into a large microwave-safe bowl.
  • Empty the soup mix into a measuring glass.
  • Add enough boiling water to make 400 mL (or as directed in the package).
  • Pour over the oats.
  • Cook in microwave for 1-2 minutes. Cook time depends on the type of oats used, how thick you want your porridge to be, and also the microwave power. I usually used rolled oats and cook it for 1 1/2 minutes.
  • I usually do not add milk when serving, unless I overcook the porridge and it becomes too thick :D.
  • Enjoy!

This recipe is one that I have been making for ages at home, however, this particular recipe, is the one that was published in The Nation's Favourite Food cookbook, a poll run by the BBC to "capture" the Nation's best loved and top 100 recipes - the Nation being the Great Britain. Jo Pratt is the author of this recipe, but, I have tweaked a bit here and there, to my own personal tastes! Enjoy a bowl of Podgy Porridge on a cold and wet winter's morning! I have added a Non-Podgy version at the end of the recipe as well!

The Nation's Favourite - Podgy Porridge! image

Steps:

  • Place the milk in a large, non-stick saucepan and bring to the boil. Briskly stir in the oats, honey, cinnamon and salt.
  • Bring to a very gentle simmer and cook for 8 - 10 minutes, stirring occasionally. Once the mixture is cooked, add the cream or milk and stir until heated but not boiling. You will now have lovely, rich, creamy porridge.
  • Spoon the cooked porridge into warm bowls and, for ultimate extravagance, drizzle with lots of sticky golden syrup, honey or sprinkle with brown sugar.
  • NB: If guilt takes over and you don't want to go the whole hog, try a less podgy version of the porridge using skimmed milk. You can add extra milk in place of the cream at the end of the cooking time.

  • In a saucepan, combine the oats, water, salt, sugar, bananas and cinnamon. Bring to a boil, then reduce heat to low, and simmer until the liquid has been absorbed, stirring frequently. Pour into bowls, and top each with a splash of cold milk.
