TAGLIATELLE DEL "MAGNIFICO"

Steps:

  • For the pasta: On a flat surface, pour out the flour in a mound and make a crater in the center. Place the eggs (unbeaten), oil and salt in the crater and work the mixture into the flour, kneading with the flat of your hands until your dough is smooth and elastic. Let the dough rest for 30 minutes.
  • Divide the dough into four equal parts. Place one piece of dough at a time on a well-floured surface, sprinkle with more flour and roll it out thin enough to run through a pasta machine. Run through a pasta machine 3 to 4 times, changing the setting until the desired thinness is achieved. Place the pasta sheet on a well-floured surface and repeat with the remaining dough.
  • Run the pasta sheets through the fettuccine cutter in the pasta machine and place the fettuccine on a linen cloth sprinkled with flour.
  • Fill a large stockpot with 3 quarts of water and bring to a boil. While waiting for water to boil, prepare the sauce.
  • For the sauce: Combine the cream and lemon and orange zest in a skillet. Cook over medium heat, stirring frequently with a wooden spoon, until the cream lightly coats the sides of the pan, 2 to 4 minutes after it comes to a boil.
  • Add the cognac, if using, and mint leaves, and cook another 2 minutes. Season with salt to taste and set aside.
  • When the water is boiling, add 1 tablespoon kosher salt and cook the pasta until al dente. Lightly drain, transfer to the cream mixture, and saute for 1 minute, moving everything around with tongs to combine the ingredients. Add the Parmigiano-Reggiano, stir well and serve.

MAGGOT STEW

This is a recipe that my mother makes every year around Halloween when we get together for family dinner night. It's not a traditional gravy stew...it's almost like an Italian soup. It can be made ahead of time and warmed up in a crock pot or even frozen in individual portions and warmed in the microwave. The 'maggots' give an 'ewww' factor that the kids love!! My nephew that likes nothing but chicken nuggets and french fries will eat this, so it's always made for Halloween dinner!

Steps:

  • Place oil in stew pot, turn heat to medium and let heat up.
  • Measure flour, salt, pepper and garlic into a ziploc bag. Drop in stew beef, seal bag and shake until well coated.
  • Place beef in stew pot and brown on all sides, about 4 to 5 minutes. Cook until beef starts to get a nice brown crust to it.
  • Add tomatoes, beef broth, thyme and bay leaf. Let simmer for about 1 hour. In a separate pan cook orzo, drain and set aside til step 6.
  • Next add carrot pieces and green beans, cover and simmer another 45 minutes or until carrots are tender but not mushy.
  • Then add cooked orzo pasta, simmer 5 or 10 minutes more.
  • Turn off heat and serve, sprinkling the Parmesan cheese on top just before eating.

1/4 teaspoon garlic powder (NOT garlic salt)
2 lbs of stew beef, cubed
2 (14 1/2 ounce) cans stewed tomatoes
1 (10 1/2 ounce) can beef broth
1 tablespoon dried thyme
1 -2 bay leaf
3 medium carrots, peeled and sliced into bite size pieces
1 cup green beans (fresh or frozen)
3/4 cup orzo pasta, cooked according to directions (this is the 'maggots' part. This can be done during step 4.)

I say to use boiling water because I don't want you using hot water from the tap; it needs to be very hot. Put half of the sauce in a bowl (if it's about 1 cup of sauce, add just under 1 cup of very hot/almost boiling water. You can make this watery sauce as you need it so you don't end up watering down too much of the sauce.
