PAULA DEEN'S MAGICAL PEANUT BUTTER COOKIES

These cookies are made using a sugar replacement, so they are perfect for those diet-conscious snackers and/or diabetics. These would also be great cookies for someone on the Atkins diet.

Paula Deen's Magical Peanut Butter Cookies image

Steps:

  • Preheat the oven to 350 degrees F. Grease a large baking sheet.
  • In a mixing bowl, combine the peanut butter, 1 cup of Splenda, the egg, and vanilla. Stir well with a spoon.
  • Roll the dough into balls the size of walnuts. Place the balls on the prepared cookie sheet.
  • With a fork dipped in optional 1/3 cup of Splenda to prevent sticking, press a criss-cross design on each cookie.
  • Bake for 12 minutes, remove from the oven, and sprinkle the cookies with the optional 1/3 cup of Splenda.
  • Cool slightly before removing from the pan.

1 cup peanut butter (creamy or crunchy)
1 cup sugar substitute (Splenda)
1/3 cup sugar substitute (Splenda) (optional)
1 egg
1 teaspoon vanilla extract

This recipe comes from a cookbook called: "America's Best Cookbook for Kids With Diabetes". (I figured it is a pretty good cookbook for anyone with diabetes though)...It was written in 2005 by C Bartley. A friend gave me the book and the recipes that I have tried are awesome. I think this one would be a great "Gift In a Jar"...

PEANUT BUTTER COOKIES (DIABETIC FRIENDLY) image

Steps:

  • 1. PREHEAT: Oven to 350 degrees F. (180 degrees C). PREPARE: Ungreased baking sheets. IN A LARGE BOWL: Using an electric mixer or wooden spoon, beat margarine, egg, peanut butter and vanilla. STIR IN: Flour/sugar mixture until well blended.
  • 2. ROLL: Dough into 36 small balls and place about 2 inches apart on ungreased baking sheets. PRESS: Flat with a floured fork. BAKE: In preheated oven (350 degrees F) for 10 to 12 minutes, or until lightly browned. COOL: On baking sheets for 5 minutes, then remove to rack to cool completely.
  • 3. TIP: If you prefer to bake with artificial sweetener, your finished product will have a a better texture if you substitute it for only some of the sugar. In this recipe for example, substitute it for the granulated sugar.

I saw this one on Paula Deen. I was skeptical at first, because it has no flour! I made it anyway, and it sure has been a life saver! My grandpa developed Diabetes and he loves my Peanut Butter Cookie Pie (Recipe #444359). Now I can use this cookie recipe and use sugar free and/or low sugar other ingredients and still make this for him! .
