MAKE-AHEAD OVEN-ROASTED PULLED PORK
Pulled pork isn't just for barbecue sandwiches. Keep this freezer-friendly little piggy on hand to make your weeknight dinners doable and delicious!

Steps:
- Heat oven to 325°F. In 13x9-inch (3-quart) baking dish, place pork fat side up. Make (20) 1-inch slits in the fat, and tuck a clove of garlic into each. Rub all over with oil. Sprinkle with salt and pepper; rub into meat.
- Cover tightly with foil. Roast 5 1/2 to 6 1/2 hours, or until meat thermometer inserted in center of roast reads 190°F. Remove from oven; let rest until cool enough to handle, about 30 minutes.
- Shred meat with two forks, discarding garlic as you go. Toss shredded pork in some of the pan juices (if any) to coat. Divide pork into 2-cup portions. Place each portion in freezer container or resealable freezer plastic bag. Label with date. Cover and refrigerate until completely cooled, at least an hour. Transfer to freezer; freeze up to 3 months.

- Mix all ingredients except Vegetable Sauce. Spread evenly in ungreased loaf pan, 9x5x3 inches. Bake uncovered about 1 hour 30 minutes or until no longer pink in center.

- Cut four 20x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first 10 ingredients. Add beef; mix lightly but thoroughly. Shape into a 9-in. round loaf. Place loaf in center of strips in slow cooker., Cook, covered, on low 3-4 hours or until a thermometer reads at least 160°. If desired, spoon additional chili sauce over meat loaf; let stand 10 minutes. Using foil strips as handles, remove meat loaf to a platter., Freeze option: Cover and freeze leftover meat loaf slices in a greased 2-qt. shallow baking dish. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. This is a very versatile Indian curry sauce that can be served as a main course with meats and/or vegetables or as a sauce for dipping or to spice up veggie side dishes. It's great over baked potatoes.

Steps:
- Heat oil and margarine in a small skillet or wok over medium high heat. Add onion and saute until very brown, 10 to 15 minutes. (Note: This is an important step; if onion is not cooked well, sauce will taste funny.)
- Add ginger and garlic to onion and saute for an additional 2 minutes. Process onion/ginger/garlic mixture in food processor until smooth. Do not rinse food processor.
- Place onion mixture in a large saucepan. Stir in the cinnamon, black pepper, coriander, cumin, turmeric and cayenne pepper and cook over low heat until mixture is thick and has the consistency of a paste.
- Puree tomatoes, chile peppers and cilantro in food processor until smooth. Add to onion mixture and stir well over low heat, cooking off moisture from tomatoes and cilantro. Add yogurt a little bit at a time, stirring constantly to avoid curdling.
- Blend the whole mixture in food processor to puree it (for a very smooth sauce). Return to saucepan, add water and increase heat to high; bring sauce to a rolling boil. Cover saucepan and boil for 3 to 5 minutes. Reduce heat and simmer until desired consistency is reached.
- To serve with meat, cook the meat first separately, then simmer for 5 to 10 minutes in the sauce before serving over rice or with bread. To serve with vegetables, steam raw veggies first 4 to 5 minutes, then simmer for 5 to 10 minutes in the sauce before serving.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
- Set the ground turkey and ground pork out at room temperature to warm slightly.
- Heat the oil in a skillet over medium heat; cook the carrot, bell pepper, onion, garlic, and spinach in the heated oil until soft; set aside to cool.
- Mix together the turkey, pork, bread crumbs, wheat germ, eggs, 2 tablespoons ketchup, salt, and pepper in a large bowl. Add the vegetable mixture and continue to mix until evenly combined; shape into a loaf; lay on the prepared baking sheet.

Elegant sauce I concocted one night to dress up an ordinary meatloaf for company fare. Also good over pork roast. My guests thought I'd slaved in the kitchen, but it can be made in less than ten minutes.

Steps:
- Saute onion and carrot in butter until softened.
- Add flour and cook until flour taste is gone or until it is just about to turn brown.
- Add milk and make a medium-thick sauce, stirring constantly.
- Add mushrooms, salt and curry powder to taste.
- Cover and let simmer until mushrooms are cooked.
- Refrigerate until dinner time.
- You can add more milk when you reheat if the sauce is too thick, but if heated in a covered pan I doubt you'll need to add more liquid.
- Add a good dose of wine and let simmer -- be careful, you don't want to overpower the curry and other flavors.
- Place meat in center of platter and pour sauce over top and drizzle down the sides.
- Sprinkle fresh parsley and almond slivers over the top.
- Around the meat arrange broccoli flowerettes, thick slices of carrot, and small boiled potatoes.
- So-o elegant!

Steps:
- Brown meat slowly on all sides in oil in Dutch oven.
- Season generously with salt and pepper and add broth.
- Cover and simmer for about 3 hours or until meat is very tender.
- Remove meat from pan, let rest for 20 minutes, then slice thin.
- Do not use pan juices.
- For sauce, melt butter until it bubbles and browns slightly.
- Add cream, garlic, lemon juice and salt and pepper.
- Cook over medium heat for about 3 minutes.
- Spoon half of sauce in a glass 9 x 13 baking dish.
- Arrange meat slices overlapping in the sauce.
- Pour the remaining sauce over the top and refrigerate until ready to serve.
- Allow dish to set out for 30 minutes before baking.
- Heat through at 350° for about 30 minutes.

- Place 3/4 cup mozzarella and 1/2 cup pasta sauce in separate freezer-weight containers; place in freezer. Mix remaining mozzarella and pasta sauce with all remaining ingredients just until blended; shape into 4 loaves. Place on baking sheet. Freeze 1 hour or until firm.
- Transfer meatloaves to large freezer-weight resealable plastic bag. Freeze up to 1 month.
- When Ready to Serve
- Heat oven to 375�F. Place (frozen) meatloaves in 9-inch square baking dish sprayed with cooking spray. Bake 45 min. or until done (165�F).
- Meanwhile, transfer (frozen) mozzarella and pasta sauce to separate microwaveable containers. Microwave on MEDIUM-LOW (30%) 2 to 3 min. or just until thawed.
- Top meatloaves with pasta sauce and mozzarella; bake 3 to 4 min. or until mozzarella is melted.
