PIZZA MEAT LOAF CUPS
Fix and freeze these moist little meat loaves packed with pizza flavor. They're great to reheat for an after-school snack or quick dinner on soccer night. My family likes to drizzle extra pizza sauce on top. -Susan Wollin, Marshall, Wisconsin

- Preheat oven to 375°. In a large bowl, mix first 4 ingredients. Add beef; mix lightly but thoroughly. Divide into 12 portions; press each onto the bottom and up sides of a greased muffin cup. Add cheese to centers., Bake until meat is cooked through, 15-18 minutes. If desired, top with additional sauce and basil before serving. Freeze option: Freeze cooled meat loaves in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through.

- Preheat oven to 375°.
- Place bread slices in a food processor, and pulse 10 times or until fine crumbs measure 1 1/4 cups.
- Heat a medium nonstick skillet coated with cooking spray over medium-high heat. Add onion; sauté 4 minutes or until lightly browned. Place onion in food processor. Add bell peppers, and pulse 10 times or until the bell peppers are chopped.
- Combine breadcrumbs, onion mixture, cheese, pesto, salt, turkey, beef, and egg. Divide beef mixture into 9 equal portions, shaping each into a (3 x 1-inch) loaf. Place loaves on a broiler pan coated with cooking spray. Bake at 375° for 18 minutes or until lightly browned. Spoon about 1 1/2 teaspoons sauce over each loaf. Bake an additional 10 minutes or until a thermometer registers 160°.

- In a bowl, combine beef, eggs, 3/4 cup pizza sauce, crumbs, Parmesan cheese, 1/4 cup mozzarella cheese, onion, green pepper, salt, oregano and pepper; mix well. Pat into a greased 8-in. square baking dish. Bake at 350° for 50 minutes. Drain. Spread the remaining pizza sauce over loaf; bake 10 minutes more. Sprinkle with remaining mozzarella; return to the oven for 3-4 minutes or until cheese melts. Serve with additional pizza sauce if desired.

- Cool slightly. Wrap and refrigerate up to 3 days. Cover and refrigerate remaining pasta sauce.
- To reheat: Place meat loaves and remaining pasta sauce in a skillet.
- Cover and heat through. You can also make bake these and serve the heated sauce with the meat loafs immediately after, if you want.
