MANGO-PINEAPPLE BUCKLE

Tropical fruit adds a fresh twist to this traditional dessert that is halfway between a coffeecake and a crumble.

Mango-Pineapple Buckle image

Steps:

  • Preheat oven to 350 degrees. Butter a 2-quart baking dish. Toss pineapple, mangoes, and brown sugar together in a bowl. In a separate bowl, whisk together flour, cinnamon, salt, and baking soda.
  • Beat butter and granulated sugar in a mixing bowl until fluffy, about 2 minutes. Beat in vanilla. Add eggs, one at a time, beating well after each. Add flour mixture; beat until just combined. Measure out 1 cup fruit mixture; fold rest into batter.
  • Spread batter into prepared baking dish; sprinkle reserved fruit over the top. Bake until golden on top and a cake tester inserted in the center comes out clean, 45 to 50 minutes. Serve warm.

1 stick (1/2 cup) unsalted butter, room temperature, plus more for baking dish
1 small or 1/2 medium pineapple (about 1 3/4 pounds), peeled, cored, and cut into 1/2-inch pieces
2 ripe mangoes, peeled and cut into 1/2-inch pieces

Blueberry-Pineapple Buckle image

Steps:

  • Heat oven to 350°F. In large bowl, mix all filling ingredients except pineapple and blueberries with spoon until well blended. Fold in pineapple and blueberries. Spread in ungreased 8-inch square pan.
  • In small bowl, mix all topping ingredients except butter. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles resemble fine crumbs. Sprinkle over blueberry mixture.
  • Bake 45 to 50 minutes or until golden brown and toothpick inserted in center comes out clean.
  • Meanwhile, in 1-quart saucepan, mix brown sugar and cornstarch. Add enough water to reserved pineapple juice to measure 2/3 cup; stir into brown sugar mixture. Cook over medium heat, stirring constantly, until mixture boils. Boil and stir 1 minute; remove from heat. Stir in lemon juice. Serve over warm dessert.

SUMMER BERRY BUCKLE

Softer and more fruit-filled than a coffeecake, but with a higher percentage of buttery batter than a cobbler, buckles are harder to classify than they are to make. This one is tender, moist and filled with sweet summer berries. But feel free to substitute any other juicy fruit that you like: peaches, nectarines, figs, plums or pineapple. If your fruit is very sweet (figs, pineapple), reduce the sugar by a couple of tablespoons, while tart fruit (plums or tart blackberries) may need an extra tablespoon. Buckles are best eaten on the same day they are baked. But since they come together so quickly, you don't have to plan ahead.

Summer Berry Buckle image

Steps:

  • Heat oven to 375 degrees. Butter a 9-inch round cake pan.
  • In the bowl of an electric mixer, add butter, granulated sugar and brown sugar and beat until light and fluffy. Add eggs one at a time, then add lemon zest and vanilla and mix until combined.
  • In a separate bowl, combine flour, salt, nutmeg and baking powder, and whisk to combine. Add dry ingredients to egg mixture and mix until just combined.
  • Gently fold berries into the batter, then spread batter in pan and sprinkle lightly with more granulated sugar. Bake 40 to 50 minutes, or until top is golden and cake is cooked through.
  • Allow cake to cool, then sprinkle with cinnamon, if using, and confectioners' sugar.

Steps:

  • Preheat oven to 350 degrees. Butter a 2-quart baking dish. Stir lime zest and juice and diced pineapple into batter. Spread in baking dish. Bake 15 minutes, then remove from oven and quickly arrange pineapple rings on top. Bake until top is golden brown and a toothpick inserted in center of cake comes out with a few moist crumbs attached, about 25 minutes. (Tent with foil if browning too quickly.) Let cool in dish on a wire rack 20 minutes. Dust with confectioners' sugar, if desired.

Apple Buckle image

Steps:

  • Apples: Peel, slice, and core apples; cut into ¼-inch slices. Heat skillet to medium and add butter to melt, followed by apples. Stir to coat apples with butter and cook, about 2 minutes. Sprinkle sugar on top of apples, then stir so sugar melts. When the sugar starts to melt, add the bourbon (optional) and bring it to a boil. Then remove from the heat and cool to room temperature, about 10 minutes. Use a a cake tester to check apples for softness.
  • Streusel: Preheat oven to 375 F. In a medium bowl, add pecans, oats, brown sugar, flour, and salt; mix until thoroughly combined. Work in butter so the mixture becomes crumbly and the butter soaks up all the dry ingredients. Set aside.
  • In the bowl of a stand mixer fitted with a paddle attachment, cream the butter and sugar on low speed, 30 seconds. Scrape down the bowl and paddle, then continue mixing on medium until smooth and creamy, 30 more seconds. With the mixer on low, add egg and vanilla. In a bowl, combine flour and baking powder. Then add half the flour mixture to the butter-sugar mixture, mixing just until combined; then add half of the milk. Repeat until all the flour and milk have been added. Turn the mixer off; scrape down the bowl and fold in the apple mixture by hand. Pour batter into a buttered springform pan, and add streusel in pieces on top. Bake for 30-40 minutes.
  • Remove cake from oven and use a cake tester to check for doneness; it should come out dry. Remove the springform pan and slice.

I was searching around for a recipe to use my Molly's Recipe#376373 and found this great recipe on Betty Crocker website. It tasted great with the faux pineapple and I bet would taste great with regular pineapple as well. The pineapple sauce is a bit thin so feel free to add more cornstarch to thicken it up.
