SWISS CHICKEN SUPREME

Steps:
- 1. Preheat oven to 350 degrees. Pull out a 2 qt. casserole or a 9x13 pan. Lightly grease the baking pan.
- 2. Place the chicken breasts in the pan.
- 3. Cover the chicken with the Swiss cheese.
- 4. In a small bowl, mix the soup with 1/2 can of water. Pour soup over chicken.
- 5. Pour melted margarine over chicken and soup. Top with dry stuffing mix.
- 6. Bake at 350 degrees for 1 hour. Remove from oven, let rest 10 minutes. serves 4-6.
- 7. Notes: This recipes uses Pepperidge Farm stuffing mix. I like the herb seasoned, but you could use cornbread if you prefer. I also amp up the stuffing with some sauteed onions and celery and a couple dashes of poultry seasoning.

In a small bowl, combine the soup, sour cream and milk; pour over chicken. Toss the cracker crumbs and butter; sprinkle over chicken. Bake, uncovered, at 350° for 30-40 minutes or until a meat thermometer reads 170°.
BAKED CHICKEN SUPREME
I got this recipe from my Mom and subsequently lost it. Just found it again yesterday so now it's getting posted for safekeeping. It's really good and only 5 points on the weight watcher's plan.

Steps:
- Preheat oven to 350°F.
- Melt 2 tbsp of the margarine in a small saucepan over low heat.
- Add the flour and cook, stirring constantly, until it's smooth (about 2 minutes).
- Add the broth and wine.
- Cook, stirring constantly, until the mixture thickens.
- Remove from heat and stir in yogurt, lemon peel and pepper.
- Set aside.
- Place chicken and remaining margarine in a shallow baking dish.
- Bake uncovered until the chicken is no longer pink. (about 20 minutes).
- Sprinkle mushrooms over the chicken.
- Spoon broth mixture on top.
- Sprinkle with Parmesan.
- Bake until golden. (about 30 minutes).
- Garnish with parsley.
- Serve and enjoy immediately.

CHICKEN SUPREME
Found the orginal recipe on a Canadian cooking site and have modified it a bit to make this dish a bit lighter. If you have a favorite Bechamel sauce that you would prefer to use, by all means do so. Poisted for the Zaar World Tour.

- To make the mock Bechamel sauce, add the nonfat milk, onion, carrots, nutmeg and peppercorn to a small saucepan. Bring the milk to boil over medium heat. Turn off heat, put a lid on the pot and let it seep for 10 minutes. Strain out the peppercorns, onion and carrots, reserving seasoned milk. Melt butter in saucepan, whisking in the flour and cornstarch. The mixture will be dry, add about 1/4 of the milk and continue to whisk to a paste. Add in the milk powder first, then remaining milk. Simmer until the sauce is thickened.
- To poach the chicken: add chicken broth and bouquet garni to a large skillet and bring broth to a low boil. Broth should just cover chicken, add more broth if needed. Place chicken breasts into the pan and simmer for 15 minutes.
- To assemble dish: Mix together the mock Bechamel with the olives, mushrooms, parsley, chives and garlich. Tear off four pieces of aluminum foil and prepare the dull side of the foil with a quick shot of cooking spray. Place a chicken breast in the center of each piece of foil, top with 1/4 of the sauce mixture. Fold packets, wrapping chicken tightly. Bake for 10-12 minutes at 425 degrees. Serve.

SUPREME CHICKEN
I've been making this for over 10 years and it is always a hit. Great with rice pilaf and Brussels sprouts.

- In a shallow dish or bowl, combine 4 tablespoons flour, paprika, 1 teaspoon salt and pepper. Coat chicken breasts with the flour mixture. In a large skillet, brown the coated chicken in 1/4 cup of butter or margarine. Add the water, cover and let simmer covered for 25 to 30 minutes.
- Meanwhile, preheat oven to 350 degrees F (175 degrees C).
- When chicken breasts are done simmering, remove from the skillet and place in a 9x13 inch baking dish; save drippings. Combine remaining 2 tablespoons flour, 1/2 teaspoon salt and half-and-half. Mix together and stir mixture into reserved drippings in skillet. Bring to a simmer, stirring, and cook until thick and bubbly. Add mushrooms and lemon juice and stir together. Pour sauce over chicken and bake uncovered in the preheated oven for 30 minutes
- Sprinkle with cheese and bake 3-5 minutes more until cheese melts.
