MANDARIN ORANGE DIET JELL-O DESERT
This is a great desert! Light fluffy and oh so very good! It taste better in the diet form then the sugar form. I have tried both and always I'am told they like the diet version better! Now that is saying something!!

Steps:
- 1. Put jello into a bowl and add 2 cups of boiling water. Stir until dissolved. 2. Add the juice from the mandarin oranges,crushed ice and water to make 2 cups. Pour into the hot jell-0 and stir until dissolved. 3. Add the vanilla instant pudding to the jello and stir until blended well. 4. Put one tub of sugar free cool whip in with the other ingredients. Fold in until blended. 5. Set in the refrigerator for about 15 minutes or until firm enough to add the oranges (don't let it get too firm, you will pour it into another bowl later on). 6. Add one can and half of the other can (oranges) to the above mixture. Blend (use the other half of can of oranges for decoration on top of the jello)
- Put jello into a pretty clear glass footed bowl. Set in the refrigerator until firm. Put rounded teaspoons of cool whip on top all around the edge of the bowl.Put the remaining oranges in between each dollop of cool whip. Put large dollop of cool whip in center and add an orange on top of that. Very pretty and taste great!
- You can make this with a Cherry or Strawberry Jello. Cherry....Cherry jello, instant val. pudding and cherries cut up. Strawberry....Strawberry jello, instant val. pudding and cut up fresh strawberries.
- Note: I have tried other flavors and the orange version is the best.
ORANGE JELLO SALAD
Steps:
- Mix together 4 cups of water, orange jello mix, and vanilla pudding mix in a sauce pan. Bring to a boil, stirring the whole time to keep clumps from forming. Once it starts to boil, remove from heat. Pour into a heat-resistant container (I usually use a glass baking dish), cover with plastic wrap and place in the fridge for about four hours. Remove from fridge and break up the jello into chunks. Place in a large bowl. Add in the pineapple, mandarin oranges, and whipped cream and mix around until everything is combined. Keep refrigerated until you are ready to serve.

ALMOND GELATIN WITH MANDARIN ORANGES
This is an old Chinese favorite for dessert. Unsweetened soy milk can be substituted for milk.

Steps:
- Whisk the sugar into the milk in a mixing bowl until dissolved. Sprinkle the gelatin over top, and let stand for 1 minute to soften. Whisk the boiling water and almond extract into the gelatin mixture until the gelatin has dissolved. Pour into a 7-inch square pan. Refrigerate until firm, about 4 hours.
- Once firm, cut the gelatin into 1-inch squares, and place into a mixing bowl. Gently stir in the mandarin oranges and their juice to serve.

- Disolve jello in boiling water.
- Immediately add orange sherbert and stir till melted.
- Chill until slightly set, and add drained mandarin oranges. Cover with plastic wrap touching to prevent film from developing on top.
- Chill until firm.

- Place reserved mandarin orange juice in a 2-cup measuring cup. Add water to fill to the 2-cup line. Heat water/juice to boiling. Remove from heat and stir in gelatin powder, stirring until dissolved. Move mixture to a large measuring cup or bowl.
- Add one cup of ice to a 2-cup measuring cup. Add water to the ice to bring the level to the 2-cup mark. Pour ice/water into the gelatin mixture and stir until ice has melted.
- Place gelatin in the refrigerator until the mixture is partially gelled. It should be firm enough that it won’t spill out of the container, but will not hold its shape well when lifted with a spoon.
- Meanwhile, combine whipping cream and powdered sugar in a mixer with a whisk attachment. Beat on medium-high until firm peaks form. Store covered in refrigerator until ready to use.
