  • Meanwhile, make the dressing. In a bowl, combine the remaining curry powder with the yogurt, chutney and lime zest and juice (add 1 tbsp water if the dressing is a little thick).

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken into large bite-size pieces.
  • For the dressing, combine the mayonnaise, wine, chutney, curry powder, and 1 1/2 teaspoons salt in the bowl of a food processor fitted with the steel blade. Process until smooth.
  • Combine the chicken with enough dressing to moisten well. Add the celery, scallions, and raisins, and mix well. Refrigerate for a few hours to allow the flavors to blend. Add the cashews and serve at room temperature.

3 whole (6 split) chicken breasts, bone-in, skin-on
Olive oil
Kosher salt and freshly ground black pepper
1 1/2 cups good mayonnaise (recommended: Hellman's)
1/3 cup dry white wine
1/4 cup chutney (recommended: Major Grey's)
3 tablespoons curry powder
1 cup medium-diced celery (2 large stalks)
1/4 cup chopped scallions, white and green parts (2 scallions)
1/4 cup raisins
1 cup whole roasted, salted cashews

SPICY INDIAN CHICKEN AND MANGO CURRY

I love Indian food, this recipe developed after falling in love with the dish at a small family owned Indian restaurant near my home. After tweaking a few things, I think I have come up with a great copy-cat version. The curry paste can easily be substituted with the mild version for those with more sensitive palates. Serve over Basmati rice. I hope it meets your liking. Enjoy!

LUNCH BOX'S MANGO CURRIED CHICKEN SALAD

This is from The Lunch Box Restaurant courtesy of The Fort Worth Star Telegram. I did make this salad, and I all I can say is that it tastes as good as it looks. It probably is too "light" for the men, but it would make a lovely dish for a salad luncheon or potluck.

MANGO CHUTNEY CHICKEN SALAD

There are a few of these up, but this one is a little bit different - and there is no curry in it. It's actually a little bit healthy - and of course you can make alterations to make it even more so. I'm curious to know what this would taste like with chickpeas instead of chicken...DO use the brown rice. It will NOT be the same with white.I'm kind of guessing about the yield. It makes a lot, I know that! It's great with crackers or on a nice bed of greens. Cooking time does NOT include chilling (although I just ate some while it was still warm...still tastes great)

Steps:

  • If using yogurt in place of mayo, you must drain it or it will be way to watery (perhaps you could use Greek style yogurt without draining). I use a fine mesh sieve lined with about 3 layers of paper towels. Add about 1.5 cups of yogurt to end up with a cup of drained yogurt. Allow it to drain for at least an hour - you'll be surprised how much water comes out - and how thick the yogurt gets!
  • Combine chutney and mayo or yogurt in small bowl, set aside.
  • Cook rice according to instructions (This will be about 1 cup of uncooked brown rice, maybe a little more. Don't worry if it's not exactly 2 cups.).
  • Chop the pecans and toast them - either put them on a baking sheet and place them in the oven, stirring occasionally, until fragrant or do it on the stove top in a frying pan.
  • Chop the apple and place in large bowl, the one you will put the whole salad in, and add the juice of the half lemon (just put something on the apples so they don't turn brown).
  • Chop the celery, green onions. Dump them in with the apples.
  • Optional: half or slice the grapes - I leave them whole, I think they're nice that way. Dump them in the bowl.
  • Cut up and cook chicken breasts. Again, you could bake these, boil them, cook them on the stove top, whatever floats your boat. I just put some salt and pepper on them and throw them in a frying pan. Dump this in the bowl.
  • Add the mayo/yogurt and chutney mixture and stir to combine.
  • Refrigerate before serving (if you can wait that long). The flavors will develop over time. Nice cold or at room temperature.

1/2 cup mango chutney (Major Grey's, homemade, etc, I use JustJanS' www.recipezaar.com/23146)
1 cup mayonnaise (drained with a cheesecloth or with a sieve lined with paper towels, you can also use any combination) or 1 cup yogurt (drained with a cheesecloth or with a sieve lined with paper towels, you can also use any combination)
5 -7 chicken breasts, cut into bite-sized pieces
2 stalks celery, coarsely chopped
4 green onions, coarsely chopped
1 granny smith apple, coarsely chopped
lemon juice
1 -2 cup red grapes
1/2 cup pecans, chopped and toasted
2 cups cooked brown rice

CURRIED CHICKEN WITH MANGO RICE

Mango and curry go very well together - the sweetness of the mango is a nice counterpoint to the spice of the curry.

APPLE & MANGO CURRIED CHICKEN SALAD

This salad is fresh and appealing with several distinct flavors that meld together beautifully. The apple and celery add a nice crunch and there is a mild spicy kick with the addition of curry powder. For guests who enjoy curry, I would definitely entertain with this dish. It is filling, delicious and it presents well. This recipe is adapted from Good Housekeeping light and healthy recipes (2007).

Apple & Mango Curried Chicken Salad image

Steps:

  • Cook the chicken breast in an oven preheated to 350 degrees for 20-30 minutes (until no longer pink in the center).
  • As the chicken is baking, combine the yogurt, mayonnaise, salsa, lime juice and curry powder in a medium bowl. Stir to combine.
  • Peel and de-seed the mango then chop into half-inch chunks (I haven't tried this salad with mandarin orange slices, but I think they would make a nice substitution if mango is unavailable).
  • Remove the apple's core and chop into one-inch chunks. Chop the celery into 1/4-1/2 inch chunks. Cut the fresh mozzarella into one-inch chunks.
  • Add the mango, apple, celery and mozzarella to the bowl. Toss to combine.
  • Finely chop the cilantro. Add the cilantro and field greens to the bowl and stir to combine.
  • Shred the cooked chicken after it has cooled (cutting the chicken into small cubes would work as well, but shredded chicken adds a nice texture to the dish). Add to the bowl and toss.
  • Serves four as a small dish or serves two as a large dish.

1/2 lb boneless skinless chicken breast
6 tablespoons low-fat yogurt (1/4 cup plus 2 tbsp)
2 tablespoons low-fat mayonnaise
2 tablespoons salsa
1 tablespoon lime juice, freshly squeezed
1 teaspoon curry powder
1 mango, ripe (substitute mandarin orange slices, if desired)
1 apple, a small Fiji apple (if you would like more tang, use a less-sweet apple such as Granny Smith)
1 stalk celery, medium sized
4 ounces fresh mozzarella cheese
6 -8 sprigs cilantro
1 cup greens (field greens, about two small handfuls)

  • Cube the grilled chicken into 1/2″ pieces, you’ll have about 2 1/2 cups. Add the cubed chicken to a medium sized mixing bowl along with the mango, cilantro, green onion, carrots, and celery. Lightly toss to combine.
  • For the dressing mix together all the ingredients called for. Taste to see if you need to add more salt, then mix the dressing together with the chicken mixture until combined. Taste again to see if you need to adjust the salt, then serve the chicken salad with your choice of wrap.
  • I prefer to let the chicken salad sit for at least 2 hours in the fridge to let the flavors meld, and the dressing really sink into the chicken. I either make it the night before and take it for lunch for the next 2-3 days. Or I make it in the morning to serve at a brunch or light dinner.
  • To make homemade mayonnaise, crack the room temperature egg into a bowl, making sure there’s no bits of shell. Then add the egg to a blender along with the white wine vinegar, Dijon mustard, and sea salt. Then secure the lid and blend starting on low speed.
