SLOW-COOKER MAPLE BUTTERNUT SQUASH SOUP
Taste the flavors of autumn with squash, apples, maple and spice cooked in a cozy soup.

Steps:
- Spray 4- to 5-quart slow cooker with cooking spray. In cooker, mix squash, apple, onion, cinnamon, nutmeg, salt and pepper. Pour broth over vegetable mixture.
- Cover; cook on Low heat setting 7 to 8 hours (or on High heat setting 3 hours 30 minutes to 4 hours).
- Pour about 3 cups of the soup mixture into blender. Cover; blend until smooth. Pour into 8-cup measuring cup or heat-proof pitcher. Blend remaining soup mixture in 2 more batches; pour into measuring cup. Pour pureed soup back into slow cooker. Stir in half-and-half and syrup.
- If needed, increase heat setting to High; cover and cook about 15 minutes longer or unto hot. Top each serving with yogurt; sprinkle with chives.

My step-daughter brought this recipe to me. She will not normally eat squash, but she loves this soup. CAUTION!!! Before blending, be sure the soup has cooled slightly or it may pop the top off your blender & make a mess & possibly burn you!

Steps:
- Melt butter in a thick bottom pot over medium heat.
- Saute onions, apples and squash 15 minutes, stirring.
- Add apple juice and cook until liquid reduces by 1/2.
- Add chicken stock and 1/4 cup maple syrup.
- Reducing heat to low, simmer until squash is tender, stirring occasionally (about 30 minutes).
- Cool for about 10 minutes.
- Working in batches, place mixture in blender or food processor and blend until smooth.
- Return each batch to pot.
- Simmer on low heat.
- Heat cream slowly in a separate pot and slowly whisk into the soup.
- Add lime juice, remaining maple syrup and season to taste with salt and pepper.
- Serve with a dollop of butter on top.

- To make the soup, heat a 4- or 6-quart (3.6- or 5.4-liter) Dutch oven or heavy-bottomed pot over medium heat. Lay the bacon in the pot, then spray with nonstick cooking spray (see Cook’s Note) and allow to render and brown to a crisp, 4 to 6 minutes. Remove the bacon from the pot, crumble into a bowl and reserve.
- In the same pot, with the bacon drippings, add the garlic, thyme and bay leaf and cook until fragrant, about 1 minute. Add the squash, carrot and apple. Stir and scrape the bottom of the pot to deglaze, about 1 minute. Add the chicken stock and scrape again to deglaze the pot. Increase the heat to medium-high and bring to a boil, then reduce to a simmer. Simmer, uncovered, for about 30 minutes.
- Remove the thyme sprigs and bay leaf (the thyme leaves should be in the soup). Transfer the soup to a blender in small batches and puree. Pour into a large bowl temporarily. When all the soup is pureed, pour it back into the pot over medium heat. Add the apple cider vinegar, salt and pepper, stir thoroughly, taste and adjust the salt and pepper, if needed.
- To make the maple sour cream, in a small bowl, whisk together the half-and-half, sour cream and maple syrup until smooth and even. Season with a pinch of salt. You want it to taste creamy with a touch of salty and sweet. Serve the soup with the crumbled bacon, a spoonful of maple sour cream and thyme leaves for garnish.

- Heat 1 teaspoon of olive oil or butter to a dutch oven or large saucepan over medium-high heat. Add apples, carrots, onions, and sauté for 10 minutes or until apples begin to cook and onions become translucent. Next add cinnamon and stir again. Remove from heat.
- Once the squash is cool enough to handle, scoop out the roasted squash and add to the dutch oven.
- Next add the chicken broth and bring the mixture to a boil. Cover, reduce heat, and simmer for 20 minutes longer. Remove from heat and stir in milk, maple syrup, and a pinch of salt.
