MAPLE GLAZED RIBS

Basted with a savory sweet sauce, these ribs are definitely finger-licking good!

Maple Glazed Ribs image

Steps:

  • Place ribs in a large pot, and cover with water. Cover, and simmer for 1 hour, or until meat is tender. Drain, and transfer ribs to a shallow dish.
  • In a small saucepan, stir together the maple syrup, brown sugar, ketchup, vinegar, Worcestershire sauce, salt, and mustard powder. Bring to a low boil, and cook for 5 minutes, stirring frequently. Cool slightly, then pour over ribs, and marinate in the refrigerator for 2 hours.
  • Prepare grill for cooking with indirect heat. Remove ribs from marinade. Transfer marinade to a small saucepan, and boil for several minutes.
  • Lightly oil grate. Cook for about 20 minutes, basting with the cooked marinade frequently, until nicely glazed.

Steps:

  • Preheat oven to 350 degrees F.
  • Place ribs in a roasting pan and sprinkle with salt. Bake for approximately 25 minutes. After the ribs are golden brown, remove from the oven and baste with pure maple syrup.
  • Lower the oven temperature to 250 degrees F. Tightly wrap the ribs with a foil tent, making sure not to put any holes in the foil in order to maintain moisture and flavor. Return to the oven for approximately 10 hours. When you open the foil to check the ribs (carefully avoiding the steam), you should be able to place a fork into the meat and it should immediately break off the bone. If there is any resistance or hardness, continue cooking in the oven for up to 2 hours longer.
  • After cooking is complete, coat with another layer of maple syrup. If not serving immediately, wrap in plastic to keep moist until ready to use. To serve, cut each rack in half.
  • This method of slow cooking Maple Glazed Ribs assures the most tender, moist and delicious maple-flavored ribs!

Steps:

  • Mix maple syrup, mustard, brown sugar, hot sauce and soy sauce. In separate dish, save 1/2 cup mixture for basting ribs right before serving.
  • Brush ribs with mixture.
  • Place ribs in shallow pan; cover with foil.
  • Bake in 350 oven for 1 1/2 - 2 hours or until meat reaches 160.
  • Remove foil, brush ribs with reserved sauce.
  • Season with salt and pepper, and serve.

MAPLE MUSTARD

I found this recipe in the paper, and am posting as written. I used sugar free maple syrup and a good heaped teaspoon of the mustard seeds and this turned out amazing. This will go perfect with anything from salad to pork, and the family loved this. Keeps in the fridge for about 2 weeks.

Steps:

  • Bring the maple syrup to the boil and boil keeping it bubbling, when the bubbles start to go from small to big and the mixture is thickened this is about the time it is ready ( The recipe states several minutes, although mine took about 4-5 minutes). Remove from heat when thickened.
  • Cool maple mixture. (With this step, my mixture was not completely cooled).
  • When cool whisk in the Dijon mustard, seeds and pepper.
  • This is ready once it has completely cooled.

185 ml maple syrup
125 ml Dijon mustard
1 teaspoon mustard seeds (heaped teaspoon)
1/4 teaspoon black pepper

  • Using a dull dinner knife, slide the tip under the membrane covering the back of each rack of ribs. Lift and loosen the membrane until it breaks, then grab a corner of it with a paper towel and pull it off. Cut each rack crosswise in the middle to create two smaller racks.
  • Season the half racks all over with the larger amount of glaze in the medium bowl, using about 3 tablespoons per side, putting more of it on the meaty sides. Using eight 18-by-24-inch sheets of heavy-duty aluminum foil, double wrap each half rack in its own packet and seal tightly. Allow the racks to stand at room temperature for 30 minutes before grilling.
