GRANOLA WITH DARK CHOCOLATE, OLIVE-OIL, AND MAPLE

The not-so-secret ingredient in this irresistible granola? Dark chocolate chunks which add a decadent note. Dried cherries, pecans, cashews, pepitas, and coconut flakes round out the deliciousness.

Granola with Dark Chocolate, Olive-Oil, and Maple image

Steps:

  • Preheat oven to 300 degrees. In a large heatproof bowl, stir together oats, pecans, cashews, coconut, and pepitas. In a small saucepan over medium heat, stir together maple syrup, oil, brown sugar, and salt until sugar dissolves and mixture begins to simmer. Pour over oatmixture; mix until evenly coated. Spread onto a parchment-lined rimmed baking sheet.
  • Bake, stirring every 15 minutes, until granola is golden and crisp, about 45 minutes. Let coolcompletely. Stir in cherries and chocolate. Granola can be stored in an airtight container at roomtemperature up to 2 weeks.

2 3/4 cups old-fashioned rolled oats
3/4 cup pecan halves, chopped
3/4 cup roasted cashews, chopped
1 cup unsweetened flaked coconut
1/2 cup pepitas
6 tablespoons pure maple syrup

We used to buy a lot of packaged snacks but realized we could make more delicious snacks on our own. During our learning process, we decided to tackle granola bars first, because when they are made with the right ingredients, they have a hearty helping of protein, will keep you filled and are easy to transport.

Olive Oil Granola Bars image

Steps:

  • Preheat the oven to 350 degrees F. Line an 8-by-8-inch baking dish with parchment paper, then lightly grease the paper with nonstick cooking spray. In a food processor, blend 1/3 cup of the oats until finely ground.
  • In a large mixing bowl, stir together the ground oats, remaining 1 2/3 cups oats, brown sugar, dried cherries, almonds, pumpkin seeds, sunflower seeds, cinnamon and salt. In a small bowl, whisk together the peanut butter, olive oil and maple syrup. Add the wet mixture to the dry mixture and stir until thoroughly combined.
  • Spread the mixture evenly in the prepared pan. Bake for about 30 minutes, or until the top starts to brown and the edges are golden. Let cool in pan completely, then remove and cut into 12 bars. Bars can stay in an airtight container for up to a week.

Steps:

  • Preheat the oven to 350. Put your dry granola ingredients including coconut and cinnamon, except for the dried fruit on a sheet pan. Stir well and smooth out. Mix maple syrup, olive oil and vanilla in a small bowl. Drizzle over granola and stir.
  • Place in the preheated oven for 25 to 30 minutes. Stir every 5 minutes take the granola out, stir it, and then smooth it down with a wooden spoon and return to the oven. Be very careful not to burn it.
  • While it is roasting chop up any large dried fruit. When the granola is nice and golden, remove it from the oven and add the dried fruit.
  • Once it is cooled, store in sealed container. It will last up to 2 weeks.

This is my favorite granola recipe adapted from the joy of baking website. It's not too sweet, and tastes great with a variety of nuts and dried fruit. Makes a great gift!

Honey Maple Granola image

Steps:

  • Preheat oven to 300 degrees.
  • Line a baking sheet with parchment paper.
  • Combine rolled oats, coconut, nuts, cinnamon, and salt.
  • In a separate bowl stir together oil, maple syrup and honey.
  • Pour liquid mixture over the dry ingredients and stir together.
  • Spread onto the prepared baking sheet and bake for approx 20-25 minutes (stirring occasionally).
  • The longer you bake it the crunchier the granola will be. It may still be sticky when it comes out of the oven, but it will become crisp and dry as it cools.
  • Place baking sheet on a wire cooling rack.
  • Once cooled, mix in the dried fruit and store in an airtight container or plastic bag in the refrigerator.
  • It will keep for several weeks.
