MAPLE-GLAZED HAM
I cook this ham for Christmas and for Easter, but my husband thinks that twice a year is not enough. If it were up to him, we'd eat this every day! When I have larger hams, I double the glaze. If any glaze is left, we use it on pancakes the next day. -Jeanie Beasley, Tupelo, Mississippi

Steps:
- Preheat the oven to 350 degrees F.
- Place the ham in a roasting dish with 1 cup water in the bottom of the dish. Roast for 1 hour and 15 minutes. (Check the ham after 45 minutes and add more water if necessary or tent with aluminum foil if it is getting past a dark golden brown.)
- Meanwhile, combine the syrup, mustard, soy sauce, brown sugar, vinegar, Worcestershire and cayenne in a saucepan over medium-high heat. Cook, stirring frequently, until the mixture is thick and bubbly, 15 to 20 minutes.
- If you used it, remove the foil from the ham and slather the ham with the glaze. Return the ham to the oven uncovered. Continue to roast, brushing the ham with the glaze every 15 minutes, until the internal temperature is between 140 and 150 degrees F, another 1 hour and 30 minutes. (If the ham starts to become too dark on the outside, tent it with aluminum foil. We are looking for a dark, sticky, flavorful glaze on the outside of the ham. Use all the glaze! Really slather it on!)
- Remove the ham from the oven, remove the foil, brush with any remaining glaze and cook, uncovered for another 5 minutes. Let it rest for 20 to 30 minutes.
- Serve hot or at room temperature.

Steps:
- In a large pot bring the ham to a boil in the maple syrup water.
- Reduce the heat and let simmer on low heat for 3 to 4 hours, or until the ham is tender.
- Remove the ham from the water and let sit for 15 minutes or until cooled.
- Reserve a few cups of this water for later use.
- Once ham is cooled remove the rind and place aside for now.
- In a bowl crush the maple sugar and mix with the mustard and apple juice, stir well till blended.
- Add the cloves to the maple sugar and juice mixture and let sit for 15 minutes until the flavors blend together.
- Place your ham in a roasting pan and baste your ham with the maple sugar juice mixture, making sure to heavily coat the whole ham.
- Add a cup or more of the ham water into your roasting pan and add the ham rind.
- Add the raisins, placing some raisins over the the top of ham.
- Bake ham for 40 to 50 minutes in a 300°F oven. Baste your ham often adding more ham water if needed, the more the tastier it will be.
- Remove from oven and place on serving platter, pour the raisins and maple syrup drippings over the ham.
- Note: I use quebec smoked ham. My mother makes this ham with bacon strips over top of ham held on with toothpicks. Like I said the more flavors the tastier it will be. We make this ham for Easter, Thanksgiving or Christmas. Serve with mashed potatoes, carrots and turnips all whipped together.

Steps:
- Preheat oven to 325°F If desired, score ham by making diagonal cuts 1-inch apart in fat in a diamond pattern. Place on rack in a shallow roasting pan. Insert meat thermometer. Thermometer should not touch bone. Bake until thermometer registers 125°F For rump, allow 1-1/4 to 1-1/2 hours; for shank, allow 1-3/4 to 2 hours.
- Meanwhile, for glaze, in a medium saucepan stir together sugar, vinegar, and mint sprigs. Bring to boiling. Reduce heat. Boil gently, uncovered, about 30 minutes or until reduced to 1 cup. Remove from heat. Remove and discard mint. Brush ham with some of the glaze.
- Baked ham for 20 to 30 minutes more or until thermometer registers 135°F, brushing three more times with additional glaze. Sprinkle with pepper. Let stand 15 minutes before carving. (The meats temperature will rise 5 degrees during standing to the safe temperature of 140°F.) Serve meat on a platter layered with green tops of uncooked leeks and green onions, if desired. Sprinkle with pepper, if desired. Bring any remaining glaze to boiling and serve with ham. Makes 16 to 20 servings.

CROCK POT MAPLE HAM
This is like a poor man's maple glazed ham. We love the spiral sliced maple/honey glazed hams, but they are soooo expensive. This is a great way to make one without spending a fortune.
