COCONUT COCOA BALLS

Sweet and dense, these no-bake cookie balls are worth every darn calorie. If you love coconut and chocolate, these are for you. They have a nice chocolate flavor and the coconut coating is the perfect complement. Once they're chilled, they have the perfect texture and a slight rum flavor comes through. It's like a rum ball without the harsh alcohol flavor. A beautiful addition to a dessert tray during the holidays.

Coconut Cocoa Balls image

Steps:

  • Mix butter with dry ingredients - NOT the coconut.
  • Add half and half.
  • Add 1/2 Tbsp rum extract at the time and taste. Add only the amount of extract that suits your taste. The mixture must be slightly sticky. Note, that various brands of rum extract have different strengths. I prefer Oetker's.
  • Roll in bite-size balls.
  • Cover with coconut.
  • Keep in fridge.

3 cup(s) oats, regular
1 tablespoon(s) half and half
1-2 teaspoon(s) rum extract or more - add a little of the time to match your own tasting.

Chocolate Coconut Balls image

Steps:

  • In a bowl mix together the nuts, condensed milk, almond extract and coconut. Using your fingers, press the mixture into balls about 3/4-inch round. Place onto sheet trays and let rest at room temperature for 4 hours or in the refrigerator for 1 hour.
  • After the balls have set up, melt the chocolate and shortening until smooth. Dip into the chocolate to coat evenly and lightly. Place onto a parchment or foil lined sheet pan to dry.

1 cup toasted chopped Macadamia nuts
1 cup sweetened condensed milk
1 1/2 teaspoons almond extract
8 ounces sweetened shredded coconut
One 12-ounce bag semisweet chocolate morsels, melted
1 tablespoon shortening

SWEDISH CHOCOLATE BALLS (OR COCONUT BALLS)

This is a classic Swedish recipe, beloved by every Swede. It is one of the first things children learn to make, and it's enjoyed greatly by all ages. The balls can either be bite-sized or giant, whichever seems more appealing. Or make one big ball, and many small ones. Additional cocoa powder or chocolate can be added to intensify the flavor.

Swedish Chocolate Balls (or Coconut Balls) image

Steps:

  • Mix the oats, sugar, and cocoa together in a bowl. Add the butter, and use your hands to mix the ingredients together to make a thick dough. Mix in the coffee, vanilla, and chocolate until thoroughly blended.
  • Place the coconut flakes in a small bowl. Pinch off small amounts of dough and roll between your hands to make small balls, about 1-1/2 inches in diameter. Roll the balls in the coconut flakes. Balls are ready to eat, or may be refrigerated 2 hours to become firmer.

  • In a large mixing bowl, use a fork or whisk to mix together the sugar free powdered sugar and the unsweetened cocoa. Then stir in the unsweetened condensed milk, vanilla extract, coconut oil and 1 cup of the coconut flakes. At some point you will probably need to knead this by hand.Place this mixture in the refrigerator for at least a half hour to allow it to set.
  • Prepare cookie or baking sheets with parchment paper . Place the remaining coconut flakes in a shallow bowl or plate.
  • Using a scoop or tablespoon, scoop mixture from the bowl and then shape the mix into balls- about 1- 1 1/2″. Then roll the balls in the remaining coconut and place on the prepared baking sheet. Cover and return this to the refrigerator or freeze to firm up. Store these balls individually wrapped or covered well with wax paper or parchment paper separating the layers if layered.
