- 1. Place all ingredients in blender container. Cover; blend at medium speed until smooth and frothy, about 1 minute. Pour into glasses and enjoy.
PEACHY KEEN COBBLER
Out of all the cobblers I have tried, this is my favorite! I got this from one of my sisters, and changed it a litttle. Sometimes I add raspberries or blueberries, etc.

Steps:
- Preheat oven to 350°F.
- Place peaches in bowl, add 1 cup sugar. Stir and set aside for 30 minutes.
- Meanwhile, sift all dry ingredients together in another bowl.
- In separate bowl, add vanilla to milk. Stir dry ingredients into milk mixture.
- Melt butter and add to milk/flour mixture. Place peach/sugar mixture in 11"x 8" baking dish. Pour batter over top.
- Bake at 350*F. 30 minutes. Then turn up to 400*F. and bake another 15 minutes.
- Enjoy!

- In a large saucepan, combine sugar, water and ginger; bring to a boil. Reduce heat; simmer 10 minutes. Cool completely. Pour syrup through a strainer into a covered container; discard ginger., Place liqueur and 1/4 cup ginger syrup in a blender. (Cover and refrigerate remaining syrup for another use.) Add peaches; cover and process until smooth., Transfer mixture to a 2-qt. pitcher; stir in wine. Serve over ice, topping with ginger ale. If desired, serve with mint and peach slices.

- 1. Preheat oven to 350 degrees. Spray a 9x13" pan with non-stick cooking spray.
- 2. In a large bowl mix cake mix, butter, and 1 egg with a fork until you get a crumbly mixture.
- 3. Set aside 1 1/2 cup of crumbs for topping.
- 4. Press the remaining crumbs on bottom of prepared pan; Bake 8 minutes.
- 5. Dice drained peaches and spread over top of crust.
- 6. In the bowl of an electric mixer on medium-high speed, beat the cream cheese, sugar, remaining egg, and vanilla extract.
- 7. Spread over top of peaches.
- 8. Sprinkle with reserved crumbs. Bake 30 minutes.
- 9. Chill at least 30 minutes before serving. Serves 12. Store leftovers in the refrigerator.
PEACHY KEEN COBBLER
OMG this is so good. I use 1/2c of brown sugar instead of the cup of white sugar because the crust comes out like a very most bread pudding...yum yum. - 1. Pre-heat oven 350 Butter- put in baking dish and put in oven to melt while you pre heat ( dont let butter burn, butter will be ready in 3-5 mins while preheating the oven)
- 2. Self rising flour- measure a cup and sift. ( Home-made self rising flour, for every 1c. of all purpose flour add 1 & 1/4 tsp of baking powder and 1/4 tsp. of salt ) and sift. ( remember to check on your butter in the oven, if its melted just take out and set on the stove until you have the rest ready to pour in)
- 3. Brown sugar and sifted flour- mix together well Milk- add 1 cup slowly and mix until no lumps and pour batter over melted butter in pan ( Do not stir at all )
- 4. Peaches- take out peaches with a spoon slowly add on top of batter, then gently pour 1/2 of the cans heavy syrup in different spot of the batter....( Do Not stir) Cinnamon- sprinkle on top and bake in the oven ( I always put a cookie sheet pan under my baking dish so it doesn't spill over, use a 2 quart baking dish) Bake for 30-45 mins until crust golden brown, let it cool for 15-17 min before serve, and you can add a side of vanilla bean ice cream and whipped topping.
- 5. You can use can apples or other caned fruit with this recipe, I would only use the cinnamon on the peaches or apples. Home made from fresh peach- mix 2c of fresh cut peaches with1c white sugar and 1c of water in a sauce pan. Bring to a boil, reduce heat to simmer, and cook for 8-9 mins.

- Prepare pans. If you want to leave the cake in the pan then you can use a 9″ X 13″. Spray the bottom with cooking spray. If you want to make a layer cake then use either 8″ or 9″ rounds and line the bottom with waxed paper and spray the sides with cooking spray.
- Drain peaches, reserving juice. Pour the peach juice into a measuring cup and fill the rest of the way (to 1/ 1/4 cups) with water. In a large bowl combine cake mix, eggs and canola oil; mix and bake according to package directions.
- If using rounds, let cake cool in the pans for 10 minutes. Run a knife between the cake and the edge of the pan, remove from pans onto wire rack, peel off waxed paper. Cool on wire rack until completely cool. If you are using a 9″ X 13″ let cake cool completely in the pan.
