MAR MAR NOODLES

Well... This dish is a ironic dish for me to post as my first recipe to share with you. I LOVE Thai food and this is a great westernized version of Pad Thai. Simple, but tastes fabulous! My husband and I immdetiatley knew this was a hit upon our first bite! Don't be afraid to add other ingredients such as bean sprouts, chicken etc. since we changed the recipe from its original version (Dan Dan Noodles, Food & Wine Jan 2006), my husband renamed it after me. :-)

Steps:

  • In a large skillet, heat the peanut oil.
  • Add peanuts and fry over moderate heat until golden, about 8 minutes; let cool slightly.
  • Transfer peanuts and oil to a food processor.
  • Add the jalapeno, garlic, and ginger and process until minced.
  • Add the soy sauce, water, rice vinegar Sriracha, sugar and sesame oil and process until smooth.
  • Season generously with salt.
  • In a pot of boiling salt water, cook the noodles until al dente.
  • Drain, at this point you can with either rinse with cold water and toss with the sauce for an excellent salad or you can toss the hot noodles with the sauce for an excellent hot meal.
  • Garnish with Cilantro and Lime Wedge.

1/4 cup peanut oil
1/2 cup raw peanuts
1 small jalapeno, minced
1 small garlic clove
1 tablespoon fresh ginger, peeled and chopped
2 1/2 tablespoons soy sauce
2 tablespoons water
1 1/2 tablespoons rice vinegar
1 tablespoon sriracha sauce
1 tablespoon sugar
1 teaspoon sesame oil (asian version)
kosher salt
12 ounces chow mein rice noodles or 12 ounces linguine
fresh cilantro (to garnish)
lime wedge (to garnish)

PASTA TUTTO MARE

This creamy pasta is oh so good. My daughter and I love pasta. We love this recipe. It has shrimp and crab meat in it. We think you will enjoy this as much as we do. This recipe was adapted by my manager at work, from her very own cookbook she had published. I'm guessing on the cooking time, I do know it don't take long to make this dish.

Pasta Tutto Mare image

Steps:

  • Assemble all ingredients in sauce pan.
  • Stir over low heat until thickened.
  • Stir in 1/2°C parmesan cheese, cavatelli noodles, shrimp and crab meat. Stir until shrimp and crab meat are warm.
  • Serve in large pasta bowl, with 1 tablespoons crushed graham crackers on top.

2 cups half-and-half cream
1/2 cup provolone cheese
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic
2 tablespoons parsley flakes
3 dashes curry powder
1/2 cup fresh mushrooms, diced
1 tablespoon butter, heaping
1 (16 ounce) package cavatelli, cooked & drained
1/2 cup parmesan cheese, grated
3 ounces shrimp, fresh, cut in small pieces
3 ounces crabmeat, cut in small pieces
1 tablespoon crushed graham cracker (optional)

  • Heat 1 tablespoon of oil in wok or large skillet over high heat. Add shallots and carrot and cook for 2 minutes. Add another tablespoon of oil to the pan. Add chicken and season with pepper. Add garlic and ginger and cook for 10 seconds. Add bell pepper, zucchini, tomato and the whites of the chopped green onion and cook for 2 minutes.
  • Add noodles to the pan and pour the sauce over the noodles. Toss and cook for a few minutes until warmed through. Remove from heat and stir in chopped basil.

  • Work the 2 tablespoons of water into the sliced chicken with your hands until the chicken absorbs the liquid. Add 1 teaspoon soy sauce, 1 teaspoon oil, and 2 teaspoons cornstarch, and mix until the chicken is evenly coated. Set aside for 20 minutes.
  • Follow the directions on the rice noodle package to prepare your noodles. What we usually do is prepare a stainless steel bowl with hot tap water to soak the noodles for about 15 minutes. Then we just drain them and set aside for cooking.
  • Stir together the dissolved brown sugar mixture, soy sauces, fish sauce, oyster sauce, and white pepper in a small bowl and set aside.
  • Heat your wok until it’s close to smoking, and spread 2 tablespoons of oil around the perimeter of the wok. Add the chicken and let it sear for 1 minute on each side until it’s about 90% cooked. Remove from the wok and set aside. If the heat was high enough and you seared the meat correctly, your wok should be still clean with nothing sticking to it. If not, you can wash the wok to prevent the rice noodles from sticking.
