I-CAN'T-BELIEVE-IT'S-CARROTS CASSEROLE!
This is the best darn carrot dish in the whole world. It's so good even my dad--who abhors carrots and usually won't even look at them--devours it like there's no tomorrow! This is almost sweet enough to be dessert. Maybe it's too sweet for those of you who are used to plain or savory carrots! In my family we like sweet carrots to complement the rest of the grub on the table, and this saves on time and money that might be spent on dessert. You can make this with squashes, too. Be sure to cook the carrots until they are almost mushy, so that you will get a smoother texture when they are mashed. My family prefers a coarser texture, so I just use an old-fashioned potato masher, but you can puree the carrots in a food processor or blender if you prefer. This is not a quick dish, so you can make it ahead and refrigerate until ready to bake, if you wish. Adapted from a recipe from Allrecipes.com.

Steps:
- Peel the carrots, trim the ends, and cut into chunks about 1 inch long. Place in a saucepan with water to cover, and cook over medium-high heat until very tender, about 40 minutes.
- Drain the carrots well and place them in a large mixing bowl. Use a potato masher to finely mash the carrots.
- Add the butter/margarine to the carrots and blend well with an electric mixer or a wooden spoon. Add the remaining ingredients to the carrots, mixing until smooth.
- Pour the carrot mixture into a buttered 3-4 quart casserole dish or baking pan.
- Bake at 350 F for about 40 minutes, or until center is set.
MOROCCAN CARROTS

- 1. Using a mandoline slicer or very sharp knife, very thinly slice the carrots on the diagonal about 1/16 inch thick and put them in a bowl.
- 2. Put the cumin, paprika, cinnamon and cayenne in a small dry skillet over medium-low heat. Cook, stirring frequently, until the spices are fragrant, about 1 minute. Add the oil and swirl the pan to mix. Add the lemon juice and swirl the pan; when the mixture begins to bubble, add the garlic and cook, swirling the pan, for 15 to 20 seconds, until the dressing is very hot. Pour the hot dressing over the carrots and toss with a large rubber spatula until the carrots are evenly coated and have absorbed the dressing. Add the parsley, season with salt and pepper, and toss until combined.
- 3. Serve at room temperature, with harissa, or refrigerate until ready to serve.
CARROTS AND RUTABAGA MASH
My mother does a lovely job on this mash and it is to this day one of my favorite dishes.

Steps:
- Peel Carrots; slice crosswise on the bias.
- Cook, covered, in boiling salted water, until just tender, about twenty minutes.
- Drain thoroughly (this is really important).
- Set aside.
- In a medium saucepan melt butter,blend in flour, dry mustard, salt, paprika and pepper.
- Add milk all at once.
- Cook and stir until thickened and bubbly (This requires a bit of time).
- Stir in 1/4 cup of the grated parmesan cheese.
- Combine cooked carrots and sauce.
- Turn into a one and a half quart casserole dish.
- Bake, covered, at 350 degrees for 30 minutes.
- Uncover, and sprinkle with up to one half cup of additional parmesan cheese (depending on your taste).
- Bake,uncovered, for five more minutes or until desired browning is achieved.
CUMIN ROASTED CARROTS
Steps:
- Preheat an oven to 350 degrees F, or a grill to high (if you are outside, prepare a campfire). Cut any large carrots in half lengthwise and crosswise.
- Drizzle a large sheet of foil with some oil. Arrange the carrots in a flat, single layer over half the sheet of foil. Drizzle the carrots with more oil and sprinkle with the garlic, cumin and salt and pepper. Top the carrots with the butter and drizzle with the honey. Fold the foil in half over the carrots and fold the edges to seal and form a pouch. To avoid crowding the carrots, make two pouches if necessary.
- Cook the pouch in the oven or on a grill or campfire for 15 minutes. To serve, cut open the pouch tableside and finish with a sprinkle of parsley.

- Preheat oven to 350 degrees F (175 degrees C).
- Place carrots in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 6-10 minutes. Drain. Meanwhile, in a small bowl combine crushed crackers with 1 tablespoon melted margarine. Mix well and set aside.
- In a medium skillet over low heat, heat the remaining 2 tablespoons of margarine and saute onions until tender. Stir in flour, salt and pepper. Cook for a few minutes, stirring to prevent browning. Gradually pour in milk, stirring constantly. Increase heat to medium and cook until bubbly and thickened. Add cheese and stir until smooth. Fold in carrots.
- Pour mixture into a 9x12 inch baking dish and sprinkle with the crumb mixture.
- Bake in preheated oven for 20 minutes, or until bubbly and golden brown.
