ORIGINAL PLUM TORTE

The Times published Marian Burros's recipe for Plum Torte every September from 1983 until 1989, when the editors determined that enough was enough. The recipe was to be printed for the last time that year. "To counter anticipated protests," Ms. Burros wrote a few years later, "the recipe was printed in larger type than usual with a broken-line border around it to encourage clipping." It didn't help. The paper was flooded with angry letters. "The appearance of the recipe, like the torte itself, is bittersweet," wrote a reader in Tarrytown, N.Y. "Summer is leaving, fall is coming. That's what your annual recipe is all about. Don't be grumpy about it." We are not! And we pledge that every year, as summer gives way to fall, we will make sure that the recipe is easily available to one and all. The original 1983 recipe called for 1 cup sugar; the 1989 version reduced that to 3/4 cup. We give both options below. Here are five ways to adapt the torte.

Original Plum Torte image

Steps:

  • Heat oven to 350 degrees.
  • Cream the sugar and butter in a bowl. Add the flour, baking powder, salt and eggs and beat well.
  • Spoon the batter into a springform pan of 8, 9 or 10 inches. Place the plum halves skin side up on top of the batter. Sprinkle lightly with sugar and lemon juice, depending on the sweetness of the fruit. Sprinkle with about 1 teaspoon of cinnamon, depending on how much you like cinnamon.
  • Bake 1 hour, approximately. Remove and cool; refrigerate or freeze if desired. Or cool to lukewarm and serve plain or with whipped cream. (To serve a torte that was frozen, defrost and reheat it briefly at 300 degrees.)

Coleslaw With Mango image

Steps:

  • Shred whole cabbage fine.
  • Scrape carrot and shred fine.
  • Chop onion and pepper fine.
  • Peel mango and dice fine.
  • Combine onion, pepper, mango, yogurt, caraway seeds, vinegar and mustard; stir well.
  • Stir in cabbage and carrot; season with salt and pepper.

8 ounces whole red or green cabbage or 7 ounces shredded cabbage (3 cups)
1 medium carrot
Onion, enough for 3 tablespoons chopped
Yellow or red pepper, enough for 2 tablespoons chopped
1 mango
8 ounces mango nonfat yogurt
1 teaspoon caraway seeds
2 tablespoons cider vinegar
1/4 teaspoon dry mustard
1/8 teaspoon salt (optional)
Black pepper to taste

NEW AGE PLUM TORTE

New Age Plum Torte image

Steps:

  • Preheat oven to 350 degrees.
  • Beat the butter, 3/4 cup of the sugar and bananas with electric mixer until well blended. Beat in flour, baking powder and egg substitute until well blended.
  • Spoon batter in 8- , 9- or 10-inch ungreased spring form. Arrange plum halves skin side down; sprinkle with 2 teaspoons of sugar -- more if plums are very tart -- a few squeezes of lemon juice and about 1 teaspoon cinnamon -- more if you like cinnamon.
  • Bake one hour, approximately. Remove and cool; refrigerate or freeze, if desired. Or cool to lukewarm and serve.
  • To serve torte that was frozen, defrost and reheat briefly at 300 degrees.

BLUEBERRY POPPY SEED BRUNCH CAKE

This recipe was brought to The Times in a 1990 article by Marian Burros about the 34th Pillsbury Bake-Off, the Super Bowl of baking contests, and its winners. Linda Rahman of Petaluma, Calif., who won the grand prize, was certain her cake was ''too ordinary to win anything," but it was the judges' unanimous choice because, they said, it was "light, refreshing and satisfying." We still agree.

Blueberry Poppy Seed Brunch Cake image

Steps:

  • Heat oven to 350 degrees. Grease and flour bottom and sides of a 9-inch springform pan. In large bowl, beat 2/3 cup sugar and butter until light and fluffy. Add lemon peel and egg; beat 2 minutes at medium speed. Lightly spoon flour into measuring cup; level off. In medium bowl, combine 1 1/2 cups flour, poppy seed, baking soda and salt; add to butter mixture alternately with sour cream. Spread batter over bottom and 1 inch up sides of greased and floured pan, making sure batter on sides is 1/4 inch thick.
  • In medium bowl, combine all filling ingredients; spoon over batter. Bake at 350 degrees for 45 to 55 minutes or until crust is golden brown. Cool slightly. Remove sides of pan.
  • In small bowl, combine powdered sugar and enough milk until glaze is of desired drizzling consistency; blend until smooth. Drizzle over top of warm cake. Top with a handful of fresh blueberries, if desired. Serve warm or cool.

Steps:

  • Make the cake:
  • Preheat oven to 350°F. Lightly coat two 9"-diameter cake pans with nonstick spray. Line bottoms with parchment paper rounds; lightly coat rounds with nonstick spray. If using raisins and rum, heat together in a small saucepan over low just until warm, about 2 minutes. Remove from heat and let sit until liquid is absorbed and raisins are plump, 15-20 minutes.
  • Meanwhile, toast walnuts on a rimmed baking sheet, tossing once, until golden brown, 8-10 minutes; let cool. Combine carrots and buttermilk in a medium bowl.
  • Whisk flour, cinnamon, ginger, nutmeg, baking powder, salt, and baking soda in a large bowl. Using an electric mixer on high speed, beat eggs, granulated sugar, brown sugar, and vanilla extract until pale and thick, about 4 minutes. Reduce speed to medium-low and gradually stream in oil. Add dry ingredients in 3 additions, alternating with carrot mixture in 2 additions, beginning and ending with dry ingredients; mix until smooth. Fold in raisins, if using, and walnuts with a rubber spatula. Scrape batter into prepared pans.
  • Bake cakes, rotating pans halfway through, until a tester inserted into the center comes out clean, 35-45 minutes. Transfer pans to a wire rack and let cakes cool 10 minutes. Run a knife around sides of cakes and invert onto wire rack; remove parchment. Let cool completely.
  • Make the frosting:
  • Using an electric mixer on high speed, beat cream cheese and butter in a medium bowl until smooth, about 1 minute. Beat in vanilla extract and salt. Reduce speed to low and gradually mix in powdered sugar. Increase speed to high and beat frosting until light and fluffy, about 2 minutes.
  • Assemble the cake:
  • Place 1 cake, domed side down, on a platter. Spread 3/4 cup frosting evenly over top. Place remaining cake, domed side down, on top. Spread top and sides with 1 1/4 cups frosting and chill 30 minutes to let frosting set. Spread remaining frosting over top and sides, swirling decoratively. Top with Candied Carrot Coins, if desired.

1 pound carrots, peeled, coarsely grated
1 cup buttermilk, room temperature

1/2 teaspoon freshly grated nutmeg

2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees. Lightly grease bundt-style pan or 10-inch springform pan with center hole.
  • Combine flour, baking powder, baking soda, cinnamon and salt; set aside.
  • Beat together applesauce, sugars, egg whites and orange rind and juice.
  • Blend in flour mixture with mixer at medium speed, beating only until smooth. Do not overbeat.
  • Stir in carrots and raisins.
  • Pour batter into prepared pan and bake 50 to 60 minutes or until a knife inserted near center comes out clean. Remove cake from pan, or, if using springform, remove sides of pan and put cake on wire rack to cool completely. Spoon orange glaze over cake and serve.
